Cheesy bread is the ultimate comfort food side dish that’s crispy, buttery, and loaded with melted cheese. Whether you’re serving it alongside pizza, pasta, soup, or salad, it’s always a crowd-pleaser. It is quick (ready in about 15-20 minutes), versatile, customizable, and kid-friendly.

Ingredients

  • French baguette, Italian loaf, sourdough, or ciabatta (sliced in half horizontally)
  • Unsalted butter (softened or melted)
  • Garlic (minced or powder, optional)
  • Pinch of salt
  • Shredded mozzarella
  • Grated Parmesan
  • Fresh parsley (for garnish)
  • Red pepper flakes (for garnish)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Slice the loaf in half lengthwise and place both halves cut-side up on the baking sheet.
  3. In a small bowl, mix softened butter with minced garlic (or garlic powder) and a pinch of salt.
  4. Spread the butter mixture evenly over the cut sides of the bread.
  5. Generously sprinkle shredded mozzarella over the buttered bread, ensuring full coverage.
  6. Top with a light dusting of grated Parmesan.
  7. Bake for 8-12 minutes until the cheese is completely melted, bubbly, and just starting to turn golden brown on the edges.
  8. Optional: Switch to broil for the last 1-2 minutes for extra browning, watching closely to prevent burning.
  9. Remove from the oven, sprinkle with fresh parsley and red pepper flakes if desired.
  10. Let cool for 2-3 minutes, then slice and serve warm.

Notes

Don’t overcrowd the toppings to avoid sogginess. Use freshly shredded cheese for the best melt. You can toast the bread first for extra crispiness. For storage, keep in an airtight container for up to 3 days. Reheat in the oven at 350°F (175°C) for 5-7 minutes or in an air fryer at 350°F for 3-4 minutes. Avoid microwaving as it makes the bread chewy.
