Instructions
- Remove the thin, tough membrane (silverskin) from the back/bone-side of the rib rack. Rinse the rack with cold water and pat it extremely dry with paper towels.
- In a small bowl, combine all the Dry Rub ingredients (brown sugar, smoked paprika, garlic powder, salt, and black pepper). Rub this mixture generously all over both sides of the ribs.
- For maximum flavor intensity, wrap the ribs in plastic wrap and let them refrigerate with the rub for at least 2 hours, or overnight.
- Preheat your oven to 300°F (150°C).
- Lay two large sheets of heavy-duty aluminum foil on a baking sheet. Place the seasoned ribs on the foil and fold the edges up, sealing them tightly to create a “foil packet.” Make sure it is sealed but has some space for steam to circulate.
- Transfer to the center rack of the oven. Cook, undisturbed, for 2 hours.
- While the ribs roast, prepare the glaze. In a small saucepan, combine the honey, soy sauce, rice vinegar, ketchup, minced garlic, fresh ginger, and red pepper flakes (if using).
- Bring the mixture to a simmer over medium heat, stirring occasionally. Once simmering, reduce the heat to low for a gentle simmer.
- Let the glaze simmer for 8-12 minutes, or until it has reduced by about one-third and is thick and syrupy. Optionally, whisk together 1 tsp cornstarch with 1 tbsp cold water, then whisk this slurry into the simmering glaze for extra thickness.
- Carefully remove the ribs from the oven. Increase the oven intensity by setting it to BROIL (High).
- Carefully open the foil packet, exposing the ribs (watch out for steam). Fold the edges of the foil down to create a “tray” that catches the juices.
- Brush a generous layer of the thick honey garlic glaze all over the top (meat side) of the ribs.
- Return the tray to the oven under the broiler. Broil for 3-5 minutes, watching the ribs continuously as the honey glaze can burn quickly.
- Remove the ribs from the oven. Brush on another layer of glaze. Return to the broiler for another 3-5 minutes.
- Repeat the glazing and broiling process 1-2 more times, creating multiple layers of caramelized sticky goodness, until you have a deep, dark glaze with some blackened, charred bits on the edges.
- Carefully remove the caramelized rack of ribs from the foil packet and transfer them to a cutting board.
- Let them rest for 5-10 minutes before slicing between the bones. This allows the meat juices to redistribute and the glaze to set.
- Garnish with green onions and sesame seeds before serving.
