Skinless, boneless chicken breasts tend to dry out easily when baked. Stuffing them with a moisture-rich filling solves this problem completely: Dual-Action Moisture Seal: The melted filling of cream cheese and grated sharp cheddar coats the internal meat fibers, keeping the chicken succulent from the inside out while it cooks through. Two-Stage Cooking Technique: Starting with a high-heat stovetop sear in an oven-safe skillet develops a deep golden Maillard crust in minutes, while transferring the pan directly into a 375°F (190°C) oven gently brings the internal meat to safe temperature without burning the exterior. Finely Chopped Broccoli: Steaming or par-cooking the broccoli florets and mincing them small ensures every bite has balanced vegetable texture without large raw stalks poking through the chicken pocket.
Ingredients
- 4 large boneless, skinless chicken breasts (approx. 7–8 oz / 200–225 g each)
- 1 tablespoon olive oil (for rubbing)
- 1 tablespoon avocado oil or neutral oil with a high smoke point (for searing)
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon dried oregano
- 1 teaspoon kosher salt
- ½ teaspoon freshly cracked black pepper
- 1½ cups fresh broccoli florets, steamed tender-crisp and finely minced
- 4 oz (115 g) cream cheese, softened to room temperature
- 1 cup sharp cheddar cheese, freshly shredded
- ½ cup mozzarella cheese or Monterey Jack, shredded (for stretch)
- 2 cloves garlic, finely minced
- ¼ teaspoon crushed red pepper flakes (optional, for mild warmth)
- ¼ teaspoon kosher salt
- ⅛ teaspoon ground black pepper
Instructions
- Preheat the oven to 375°F (190°C / Gas Mark 5). Place an oven rack in the center position.
- Steam fresh broccoli florets in a microwave-safe bowl with 2 tablespoons of water, covered, for 90 seconds, or steam on the stovetop for 2 to 3 minutes until vibrant green and slightly tender. Drain thoroughly. Press the broccoli gently between two paper towels to squeeze out excess moisture. Finely chop the florets into small, pea-sized bits.
- In a medium bowl, combine softened cream cheese, shredded sharp cheddar, shredded mozzarella, minced garlic, red pepper flakes, ¼ teaspoon salt, and ⅛ teaspoon black pepper. Fold in the finely chopped broccoli until evenly distributed throughout the cheese base. Divide the mixture into 4 equal portions.
- Pat each chicken breast completely dry with paper towels. Place a hand flat over the top of a chicken breast. Using a sharp knife, slice horizontally into the thickest edge of the breast to create a pocket. Cut deep enough to hold the filling, leaving about ½-inch of border uncut on the opposite side and ends. Take care not to cut entirely through the meat.
- Stuff one portion of the broccoli-cheese filling deeply into each chicken breast pocket. Pull the top edge of the breast over the filling to enclose it as much as possible. Secure the seam closed with 2 to 3 wooden toothpicks inserted horizontally.
- In a small ramekin, blend smoked paprika, garlic powder, onion powder, dried oregano, 1 teaspoon kosher salt, and ½ teaspoon cracked black pepper. Brush the outside of each stuffed breast lightly with olive oil, then rub the seasoning blend generously over both sides.
- Heat 1 tablespoon of avocado oil in a 12-inch cast-iron skillet over medium-high heat until the oil begins to shimmer. Carefully place the stuffed chicken breasts into the skillet. Sear undisturbed for 3 to 4 minutes until a deep, golden-brown crust forms on the bottom. Use tongs to gently flip the breasts over to the second side and sear for an additional 2 minutes.
- Transfer the entire skillet directly into the preheated oven. Bake for 15 to 18 minutes, or until an instant-read meat thermometer inserted into the thickest part of the chicken meat (not the cheese pocket) registers 160°F (71°C).
- Remove the skillet from the oven and tent loosely with aluminum foil. Let the chicken rest in the pan for 5 minutes. The internal temperature will rise during carryover cooking to the USDA-recommended 165°F (74°C), and the melted cheese will settle slightly so it doesn’t spill out when sliced. Carefully remove all toothpicks before plating.
Notes
Shred Cheese from the Block: Pre-shredded bagged cheese contains anti-caking agents (like potato starch or cellulose) that prevent silky, cohesive melting. Freshly grating sharp cheddar yields superior flavor and texture. Keep the Cavity Intact: Do not rush the horizontal slice. If your knife accidentally punctures the opposite side, pin the puncture closed with an extra toothpick so molten cheese does not leak onto the skillet floor. Moisture Control: Squeezing the water out of par-cooked broccoli prevents steam from diluting the seasoning and turning the filling watery. Skillet-to-Oven Versatility: If an oven-safe skillet is not available, transfer the seared chicken onto a lightly greased baking sheet or casserole dish before placing it in the oven. Storage, Freezing, and Reheating: Refrigeration: Store leftover chicken in a shallow, airtight glass container in the refrigerator for up to 3 to 4 days. Freezing: Allow the cooked chicken to cool completely. Wrap each breast tightly in plastic wrap, then wrap in a layer of heavy-duty foil or place in a freezer-safe zip bag for up to 2 months. Thaw overnight in the refrigerator before reheating. Reheating: Avoid high-power microwaving, which rubberizes the chicken meat and causes cheese to separate. Instead, preheat an oven or toaster oven to 350°F (175°C). Place chicken in a baking dish, splash 1 tablespoon of water or chicken broth into the pan bottom, cover with foil, and warm for 12 to 15 minutes until heated through. Alternatively, reheat in an air fryer at 330°F (165°C) for 6 to 8 minutes.
