Instructions

Step 1: Prep the Oven and Baking Sheet

  1. Preheat your oven to 400°F (200°C) with a rack positioned in the middle of the oven.
  2. Line a large baking sheet with parchment paper. Lightly spray or brush the parchment paper with non-stick cooking spray or olive oil to ensure the flatbreads release effortlessly after baking.

Step 2: Shred and Extract Moisture from Carrots

  1. Chef’s Key Tip: Moisture control is the secret to getting a flatbread that holds together without becoming soggy!
  2. Peel the carrots and shred them using the fine side of a box grater or the shredding disk of a food processor.
  3. Place the shredded carrots in a microwave-safe bowl and heat on High for 2 minutes to soften the fibers slightly. Allow them to cool for 3–5 minutes until safe to handle.
  4. Transfer the softened carrots into the middle of a clean kitchen towel or cheesecloth. Gather the corners and squeeze vigorously over the sink to remove as much liquid as possible. You should squeeze out a significant amount of juice.

Step 3: Combine the Flatbread Dough

  1. In a large mixing bowl, combine the squeezed, dry carrots, shredded mozzarella, grated parmesan, beaten eggs, almond flour, minced garlic, onion powder, Italian seasoning, salt, and black pepper.
  2. Mix thoroughly using a fork or clean hands until a cohesive, sticky “dough” forms and the cheese and spices are evenly distributed throughout the carrot mixture.

Step 4: Shape the Flatbreads

  1. Divide the carrot mixture into 4 equal portions on the prepared parchment paper.
  2. Use your hands or the back of a spatula to press each portion down into a thin circle or rectangle, about 1/4-inch thick .
  3. Ensure the edges are neat and pressed firm so they do not burn easily while baking.

Step 5: First Bake (Setting the Structure)

  1. Place the baking sheet into the preheated oven and bake at 400°F (200°C) for 18–20 minutes .
  2. The flatbreads are ready for topping when the edges turn golden brown, the center is firm to the touch, and the cheese inside has fully melted into the carrots.

Step 6: Add Cheesy Topping & Final Crisp (Broil / High Heat)

  1. Remove the baking sheet from the oven.
  2. Sprinkle the additional 1/4 cup of mozzarella evenly across the tops of the flatbreads.
  3. Return to the oven and bake for an additional 3–5 minutes , or switch your oven to Broil (High Intensity) for 2 minutes until the top cheese is melted, bubbly, and lightly golden brown.

Step 7: Cool, Garnish, and Serve

  1. Remove from the oven and let the flatbreads cool on the baking sheet for 5–8 minutes . This cooling period allows the cheese to set so the flatbreads can be lifted without tearing.
  2. Garnish with fresh chopped parsley, extra parmesan, or red pepper flakes.
  3. Slice into quarters or serve whole as wraps, dipping strips, or personal flatbread pizzas!
