Instructions

Step 1: Prepare the Fish (5 minutes)

  1. Pat the fish fillets completely dry with paper towels — moisture is the enemy of crispiness. Cut the fillets into strips roughly 2 cm (¾ inch) thick and 8–10 cm (3–4 inches) long. Season all sides with salt, pepper, and lemon juice. Set aside.

Step 2: Set Up the Coating Station (5 minutes)

  1. Arrange three shallow bowls in a row:
  2. Flour bowl: Whisk together the flour, smoked paprika, garlic powder, onion powder, salt, and cayenne.
  3. Egg bowl: Whisk the eggs with the milk until smooth.
  4. Panko bowl: Combine the panko, Parmesan, and parsley.

Step 3: Dredge the Fish (10 minutes)

  1. Working with one strip at a time, coat the fish in flour, shaking off excess. Dip it into the egg wash, letting excess drip off. Finally, press it firmly into the panko mixture, ensuring an even coating on all sides. Place the coated strips on a wire rack. Tip: Use one hand for dry ingredients and the other for wet to keep things tidy.
  1. Refrigerate the coated fish fingers for 10 minutes. This helps the coating adhere and prevents it from sliding off during cooking.

Step 5: Cook the Fish Fingers

  1. Method A — Pan-Frying (Recommended for Maximum Crunch): Heat the oil in a large skillet over medium-high heat (175–180°C / 350–355°F) . The oil should be about 1 cm (½ inch) deep. Fry the fish fingers in batches of 4–5, without crowding, for 2–3 minutes per side until deep golden brown and the internal temperature reaches 63°C (145°F) . Adjust heat as needed — too hot and the coating burns before the fish cooks; too cool and the fingers turn greasy.
  2. Method B — Oven-Baking (Lighter Option): Preheat the oven to 220°C (425°F) . Line a baking sheet with parchment and set a wire rack on top. Lightly spray the fish fingers with olive oil on both sides. Bake for 12–15 minutes , flipping halfway, until golden and crisp and the internal temperature reaches 63°C (145°F) .

Step 6: Drain and Rest (2 minutes)

  1. Transfer the cooked fish fingers to a wire rack (not paper towels, which can steam the coating) and sprinkle with a pinch of flaky salt. Rest for 2 minutes before serving.

Step 7: Serve

  1. Arrange on a platter with lemon wedges and your choice of dipping sauce. Garnish with fresh parsley and serve immediately.
