Equipment

  • Air Fryer: A basket-style or toaster-oven style air fryer (at least 5.8-quart capacity works best to avoid overcrowding).
  • Sharp Chef’s Knife: For cutting the pocket into the chicken breasts.
  • Toothpicks: Essential for securing the bacon and keeping the cheese sealed inside during cooking.
  • Meat Thermometer: The gold standard for ensuring your chicken is safely cooked without over-drying it.
  • Small Mixing Bowl: For combining your seasoning blend.

Ingredients

The Main Components

  • 4 large boneless, skinless chicken breasts (approx. 6–8 oz each, trimmed of excess fat)
  • 4-6 ounces cream cheese , softened to room temperature (cream cheese creates a rich, stable pocket)
  • 1 cup shredded sharp cheddar cheese or pepper jack for an extra kick
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika (essential for that barbecue depth)
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried Italian seasoning or dried oregano
  • 1/2 teaspoon kosher salt (adjust slightly since bacon is naturally salty)
  • 1/4 teaspoon freshly cracked black pepper
  • 8 to 12 slices of thin-cut bacon (avoid thick-cut bacon, as it takes much longer to crisp up and can leave the chicken overcooked)

Instructions

Step 1: Prep and Preheat

  1. Preheat your air fryer to 380°F (190°C) for about 3 to 5 minutes. While the air fryer is warming up, gather your ingredients and pat your chicken breasts completely dry with paper towels. Dry chicken surfaces are crucial for seasoning adherence and bacon crispiness.

Step 2: Mix the Cheese Filling

  1. In a small mixing bowl, combine the softened cream cheese and the shredded cheddar (or pepper jack) cheese. Mix them thoroughly until they form a cohesive paste. If desired, you can fold in a pinch of garlic powder or chopped fresh chives into the cheese mixture to elevate the flavor profile even further.

Step 3: Cut the Pockets

  1. Place a chicken breast flat on a clean cutting board. Place your non-dominant hand flat on top of the chicken. Using a sharp knife, carefully cut a deep pocket into the thickest side of the chicken breast. Take care not to slice all the way through to the other side, or the cheese will leak out everywhere during the cooking process. Repeat this for all four chicken breasts.

Step 4: Stuff the Chicken

  1. Divide the cheese mixture evenly into four portions. Stuff each portion deep into the pocket of each chicken breast. To ensure the cheese stays securely locked inside, pinch the opening closed or secure it with one or two toothpicks pushed across the opening like stitches.

Step 5: Season the Exterior

  1. In a small bowl, whisk together the garlic powder, smoked paprika, onion powder, Italian seasoning, kosher salt, and black pepper. Rub a tiny touch of olive oil or avocado oil over the outside of each stuffed chicken breast to help the spices stick, then generously apply the seasoning blend to all sides of the chicken.

Step 6: Wrap with Bacon

  1. Take 2 to 3 slices of thin-cut bacon per chicken breast and wrap them tightly and spirally around the outside of each breast, overlapping the edges slightly. Make sure the ends of the bacon are tucked underneath the chicken when you place them down, or secure them with additional toothpicks if necessary. The bacon will shrink and tighten as it renders in the heat.

Step 7: Air Fry to Perfection

  1. Carefully place the wrapped chicken breasts into the preheated air fryer basket in a single layer, leaving space between each piece for air circulation (cook in two batches if your air fryer is on the smaller side).
  2. Cook at 380°F (190°C) for 20 to 25 minutes . Halfway through the cooking time (around the 12-minute mark), use tongs to gently flip the chicken breasts to ensure the bacon crisps evenly on all sides.

Step 8: Rest and Serve

  1. Insert an instant-read meat thermometer into the thickest part of the chicken breast. Once it registers an internal temperature of 165°F (74°C) and the bacon is deeply golden and crisp, remove the chicken from the air fryer.
  2. Crucial Step: Let the chicken rest on a cutting board or serving platter for 5 to 7 minutes before slicing. This resting period allows the muscle fibers to relax and the melted cheese to settle slightly, preventing it from immediately rushing out when you cut into it. Remove any toothpicks before serving, slice into thick medallions, and enjoy!
