Instructions

Step 1: Prep & Dry the Wings

  1. Pat Dry: Remove your split chicken wings from the refrigerator. Thoroughly pat each wing dry using paper towels. Moisture is the enemy of crispiness!
  2. Dust with Baking Powder & Rub: In a small bowl, combine the baking powder, smoked paprika, garlic powder, onion powder, dried oregano, kosher salt, black pepper, and cayenne pepper.
  3. Toss to Coat: Place the wings in a large bowl, drizzle with 1 tablespoon of avocado oil, and sprinkle the seasoning mixture evenly over top. Toss vigorously until every piece is uniformly coated.
  4. Rest: Let the wings sit at room temperature for 20 to 30 minutes. (Pro Tip: For maximum crispness, place the coated wings on a wire rack uncovered in the refrigerator overnight).

Step 2: Prepare the Grill (Dual-Zone Setup)

  1. Set up your gas or charcoal grill for two-zone cooking (indirect and direct heat):
  2. Gas Grill: Turn half of the burners to medium-high heat (aiming for an internal ambient temperature of $375^\circ\text{F} – 400^\circ\text{F}$ ) and leave the remaining burners off.
  3. Charcoal Grill: Light your coals and push them all to one side of the grill floor, leaving the other side completely clear.
  4. Clean and lightly oil the grill grates to prevent sticking.

Step 3: Indirect Roasting (Medium Heat Intensity)

  1. Place the seasoned chicken wings on the cool/indirect side of the grill grate, skin-side up.
  2. Close the grill lid. Allow the wings to cook for 25 to 30 minutes without opening the lid unnecessarily.
  3. Check internal temperature using a digital meat thermometer. The wings should reach around $165^\circ\text{F} – 170^\circ\text{F}$ during this phase as the fat renders out smoothly.

Step 4: Direct Crisp & Sear (Medium-High Heat Intensity)

  1. Move the wings directly over the hot/direct heat side of the grill.
  2. Grill for 5 to 8 minutes , flipping every 1 to 2 minutes. Watch closely to avoid flare-ups!
  3. This step rapidly crisps up the outer skin, turning it a deep mahogany red and golden brown while locking in juices.

Step 5: Sauce, Glaze & Caramelize

  1. While the wings are searing, whisk together the barbecue sauce, buffalo hot sauce, melted butter, maple syrup, apple cider vinegar, and Worcestershire sauce in a heat-safe bowl.
  2. Transfer the crisped wings into a large stainless steel bowl, pour two-thirds of the warm sauce over them, and toss until heavily coated.
  3. Place the sauced wings back onto the indirect heat side of the grill for 3 to 5 minutes . Close the lid. The heat will bake the sauce directly onto the skin, creating a sticky, caramelized coating.
