Ingredients

For the Potatoes

  • 2½ pounds baby potatoes or Yukon Gold potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon chili powder

For the Chili Garlic Honey Sauce

  • 4 tablespoons honey
  • 4–5 cloves fresh garlic, finely minced
  • 1–2 tablespoons chili garlic sauce
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon apple cider vinegar or rice vinegar
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes, optional
  • ¼ teaspoon black pepper

For Finishing

  • 2 tablespoons fresh parsley, chopped
  • 1 green onion, thinly sliced
  • 1 teaspoon sesame seeds
  • Fresh chili slices, optional
  • A small squeeze of fresh lemon juice
  • Flaky sea salt, optional

Instructions

Step 1: Prepare the Potatoes

  1. Wash the potatoes thoroughly. Horticulture
  2. Cut baby potatoes in half. If using larger potatoes, cut them into evenly sized chunks.
  3. Place the potatoes into a large bowl.
  4. For extra crispy potatoes, cover them with cold water and let them soak for approximately 15–20 minutes .
  5. Drain completely.
  6. Dry the potatoes extremely well using a clean kitchen towel.
  7. This step is important because excess moisture can prevent the potatoes from becoming crispy.

  14. Onion powder
  15. Oregano

  17. Toss thoroughly until all the potatoes are coated.

  20. Preheat your oven to:
  21. 425°F (220°C).
  22. For an even crispier result, place your baking sheet in the oven while the oven is preheating.
  23. A hot baking sheet gives the potatoes a head start on browning.

  25. Spread the potatoes across it in a single layer .
  26. Place the cut side of the potatoes against the baking sheet whenever possible.
  27. Leave some space between the pieces.
  28. Do not overcrowd the pan.
  29. If necessary, use two baking sheets.

  31. Roast for approximately 25–30 minutes .
  32. After about 20–25 minutes, check the potatoes.
  33. They should begin developing:
  34. Golden edges
  35. Crispy surfaces
  36. A soft interior
  37. Turn the potatoes using a spatula or tongs.
  38. Continue roasting for another 10–15 minutes .

Notes

Store leftover potatoes in an airtight container in the refrigerator. They are best consumed within 3–4 days . For reheating, use an oven or air fryer.
