Ingredients
- 2 slices rye bread (dark or light; seeded rye is excellent)
- 3–4 tablespoons liverwurst (Braunschweiger or coarse Leberwurst)
- 1 teaspoon Dijon mustard (or German Löwensenf for extra heat)
- 1 teaspoon mayonnaise (optional, for creaminess)
- 3–4 thin slices red onion
- 2–3 cornichons or dill pickle spears, sliced lengthwise
- 1 leaf butter lettuce or a handful of arugula (optional)
- 1 teaspoon capers (optional)
- Freshly cracked black pepper
- A pinch of flaky sea salt
- 1 slice Swiss cheese or Muenster
- 1 teaspoon horseradish
- A squeeze of lemon juice
- Fresh dill or parsley
Instructions
Step 1: Prepare the Bread (Intensity: ⭐☆☆☆☆, 2 minutes)
- Toast the rye bread lightly if desired. Toasting adds crunch and prevents sogginess, especially if you’re using mayo or mustard on both slices. If you prefer soft bread, leave it untoasted.
Step 2: Apply the Condiments (Intensity: ⭐☆☆☆☆, 1 minute)
- Spread a thin layer of Dijon mustard on one slice and mayonnaise on the other. This “double condiment” method gives you tang on one side and creaminess on the other.
Step 3: Add the Liverwurst (Intensity: ⭐☆☆☆☆, 2 minutes)
- Spread the liverwurst generously—about 3–4 tablespoons per sandwich. If using a coarse variety, slice it rather than spread it. Aim for an even layer about ¼ inch thick. Don’t be shy; the bread-to-meat ratio matters.
Step 4: Layer the Onion and Pickles (Intensity: ⭐☆☆☆☆, 1 minute)
- Add thin slices of red onion. Follow with cornichons or pickle slices. If using lettuce or arugula, place it on top of the pickles to keep the bread from getting wet.
Step 5: Finish with Seasoning (Intensity: ⭐☆☆☆☆, 30 seconds)
- Add capers, a squeeze of lemon, cracked black pepper, and a pinch of flaky salt. If using cheese or horseradish, add now.
Step 6: Close and Press (Intensity: ⭐☆☆☆☆, 30 seconds)
- Close the sandwich and press gently with your palm. Cut diagonally if you like. Serve immediately.
- Total Active Time: 10 minutes Total Intensity: ⭐☆☆☆☆
