Instructions
Step 1: Prepare the Homemade Garlic-Herb Mayo
- In a small mixing bowl, combine the mayonnaise , lemon juice , minced garlic , chopped chives , black pepper , and a pinch of salt .
- Whisk thoroughly until smooth and completely integrated.
- Cover and chill in the refrigerator for at least 10–15 minutes while preparing the rest of the ingredients. This allows the garlic and herb flavors to infuse into the mayo.
Step 2: Cook the Bacon to Crisp Perfection
- Place a large heavy skillet or cast-iron pan over medium heat .
- Arrange the 6 slices of bacon in a single layer in the cold pan (starting in a cold pan helps render the fat evenly).
- Fry for 6 to 8 minutes , turning occasionally, until the bacon reaches a deep golden brown and crisp texture.
- Remove the bacon strips and transfer them to a paper towel-lined plate to drain. Reserve 1 teaspoon of bacon fat in the pan if you prefer extra flavor when toasting your bread.
Step 3: Toast the Bread Slices
- Lightly spread softened butter over both sides of all 6 bread slices (or brush with a light coating of reserved bacon grease).
- Place the bread slices in the skillet over medium heat (or arrange on a baking sheet and broil for 1–2 minutes per side).
- Toast for 2 to 3 minutes per side until evenly golden brown and crisp on the surface while remaining slightly soft in the center.
- Transfer to a clean wire rack to cool slightly. Tip: Cooling on a rack prevents steam from making the toasted bottom soggy.
