- 1 tsp Worcestershire sauce: Adds savory umami
- ½ tsp Low-sodium soy sauce: Enhances salty, savory depth
- ½ tsp Toasted sesame oil: For nutty richness
- ¼ tsp Granulated sugar: Balances acidity and tang
- ⅛ tsp Ground white pepper: Or finely cracked black pepper
The Wrappers & Coating
- 24 Square wonton wrappers: Fresh, refrigerated (keep under a damp paper towel)
- Cooking spray or neutral oil: High-smoke point (avocado oil or light olive oil spray)
- Water: 2–3 tbsp in a small dish for wetting wrapper edges

Step 1: Prepare and Blend the Filling
- In a medium mixing bowl, combine the room-temperature cream cheese, Worcestershire sauce, soy sauce, toasted sesame oil, sugar, garlic, and ground white pepper.
- Beat thoroughly with a spatula or hand mixer until silky smooth. Ensuring the cream cheese is completely soft prevents lumps and allows seamless incorporation.
- Gently fold in the chopped crab meat and sliced green onions until evenly dispersed throughout the cream base. Avoid over-mixing if using delicate lump crab meat.
Step 2: Assemble the Rangoons
- Place 4 to 6 square wonton wrappers flat on a dry cutting board or clean countertop. Cover remaining wrappers with a slightly damp paper towel to prevent drying out.
- Spoon 1 leveled teaspoon (about ½ tablespoon) of filling directly into the center of each wrapper. Do not overfill; excess filling will leak during the cook cycle.
- Dip your index finger into the dish of lukewarm water and trace the outer perimeter of the wrapper, wetting all four edges.
Step 3: Fold and Seal (Pyramid Pouch Method)
- Bring opposite diagonal corners together up over the filling, meeting at the top.
- Bring the remaining two diagonal corners up to meet in the center, creating a four-pointed star or pyramid pouch.
- Gently pinch the four folded seams firmly from the center base up toward the top point. Press out trapped air pockets around the filling. Trapped air expands and bursts the wrapper in the air fryer.
- Repeat with the remaining wrappers and filling.
Step 4: Prep the Air Fryer & Oil Coat
- Preheat the air fryer to 375°F (190°C) for 3 to 5 minutes.
- Lightly mist the air fryer basket with oil spray.
- Generously mist or brush both sides of each assembled rangoon with oil. Applying oil evenly ensures blistered, golden browning rather than dry, chalky wrapper edges.
Step 5: Air Fry to Crispy Perfection
- Arrange the rangoons in the preheated air fryer basket in a single layer with at least ½-inch space between each piece. Work in batches of 8 to 12 depending on basket dimensions.
- Cook at 375°F (190°C) for 6 to 8 minutes . Check at the 6-minute mark: the tips should turn deep golden-brown, and the wrapper base should be firm and blistered.
- If tops brown too fast while edges need more crispness, reduce heat intensity to 350°F (175°C) for an extra 1 to 2 minutes.
Step 6: Cool and Serve
- Transfer cooked rangoons to a wire rack or parchment-lined plate.
- Let rest for 3 minutes before biting into them. The interior cream cheese becomes extremely hot and requires resting to stabilize.
- Serve warm alongside sweet chili sauce or classic duck sauce.
