Instructions

  1. Thoroughly dry the chicken wings by patting them with paper towels. For better results, place them uncovered on a wire rack in the refrigerator for 30 to 60 minutes to air-dry.
  2. Whisk together the kosher salt, garlic powder, smoked paprika, onion powder, black pepper, and cayenne pepper in a small bowl.
  3. Transfer the dried wings to a large mixing bowl, drizzle with oil, and toss until coated.
  4. Sprinkle the baking powder and spice blend over the wings and toss vigorously until uniformly coated.
  5. Preheat the air fryer to 380°F (193°C) for 3 to 5 minutes.

  7. Cook at 380°F (193°C) for 12 minutes.
  8. Flip each wing, increase the temperature to 400°F (200°C), and cook for an additional 10 to 13 minutes, shaking or flipping halfway through, until deeply golden brown and crispy.
