Instructions
1. Moisture Removal & Prep
- Thoroughly pat the split chicken wings dry using paper towels. Moisture is the primary barrier to crispiness; the drier the surface, the crunchier the skin will become.
- If time permits, place the uncovered wings on a plate in the refrigerator for 30–60 minutes to air-dry the skin further.
2. Seasoning & Coating
- Position an oven rack in the upper-middle position.
- Preheat your oven to 220°C (425°F) or 200°C (400°F) if using a convection/fan-forced setting.
- Line a large rimmed baking sheet with aluminum foil for effortless cleanup, then set an oven-safe wire cooling rack directly inside the sheet. Lightly brush or spray the wire rack with oil to prevent sticking.
- In a large bowl, whisk together the baking powder, fine sea salt, garlic powder, smoked paprika, and black pepper.
- Add the dried wings to the bowl. Toss vigorously until every wing is evenly and lightly coated in the powder mixture.
3. Arranging & Baking
- Arrange the wings skin-side up in a single layer on the prepared wire rack. Ensure adequate space between each piece to allow hot air to circulate freely around all surfaces.
- Transfer the baking sheet to the oven.
- Bake undisturbed for 20 minutes .
- Using tongs, carefully flip each wing over and return them to the oven for another 15 minutes .
- Flip the wings once more so the original skin side is facing upward. Bake for a final 10 to 15 minutes , until the skin turns deep golden-brown, bubbly, and visibly blistered.
4. Preparing the Buffalo Glaze
- While the wings complete their final bake, place a small saucepan over low heat.
- Add the hot sauce, unsalted butter, honey, apple cider vinegar, Worcestershire sauce, garlic powder, and cayenne pepper (if using).
- Whisk constantly until the butter melts and the sauce emulsifies into a smooth, glossy glaze. Remove from heat immediately to prevent separation.
5. Tossing and Plating
- Remove the wings from the oven. Allow them to rest on the wire rack for 3 minutes; this allows the bubbling fats to settle and firms up the outer crust.
- Transfer the wings to a large, clean mixing bowl.
- Pour roughly three-quarters of the warm buffalo sauce over the wings. Gently toss with a rubber spatula or swirl the bowl until every piece is coated.
- Plate immediately on a warm serving platter alongside celery, carrots, and blue cheese dip. Serve any remaining sauce on the side for dipping.
