Ingredients

  • 3 cups cooked chicken, shredded or diced
  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 1 medium onion, finely diced
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 cup peas
  • 1 cup sweet corn
  • 3 cloves garlic, minced
  • ¼ cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup whole milk
  • ½ cup heavy cream
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • ½ teaspoon paprika
  • ¼ teaspoon dried rosemary
  • 1 tablespoon Dijon mustard (optional)
  • 1 tablespoon chopped fresh parsley
  • 2 sheets puff pastry, thawed
  • 1 egg
  • 1 tablespoon milk

Instructions

  1. If starting with raw chicken, season chicken breasts or thighs lightly with salt and pepper. Cook them until fully done by baking, boiling, or pan-searing. Allow the chicken to cool slightly before shredding or dicing it into bite-sized pieces.
  2. Heat the butter and olive oil together in a large skillet over medium heat.
  3. Add the diced onions, carrots, and celery. Cook for about 8 minutes until the vegetables become soft without browning.
  4. Add the minced garlic. Cook for another minute until fragrant.
  5. Sprinkle the flour evenly over the vegetables. Stir continuously for about 2 minutes so the flour cooks completely.
  6. Slowly pour in the chicken broth while whisking continuously to prevent lumps.
  7. Once smooth, gradually add the milk and heavy cream. Continue stirring until the sauce becomes thick and creamy.
  8. Add the salt, pepper, garlic powder, onion powder, thyme, parsley, paprika, and rosemary. Mix thoroughly.
  9. Stir in the Dijon mustard if using.
  10. Fold in the cooked chicken, peas, corn, and fresh parsley. Simmer for about 5 minutes until everything is heated through.
  11. Taste the filling and adjust seasoning if necessary. Remove from the heat and allow it to cool for 15–20 minutes.
  12. Lightly grease a 9-inch pie dish with butter.
  13. Roll out one sheet of puff pastry slightly larger than the pie dish. Carefully press it into the bottom and sides without stretching it. Trim any excess pastry around the edges.
  14. Spoon the cooled chicken mixture evenly into the pastry-lined dish. Spread it into an even layer so every slice has plenty of filling.
  15. Roll out the second sheet of puff pastry. Lay it gently over the filling. Trim the edges if needed.
  16. Press the top and bottom crusts together firmly. Crimp the edges with your fingers or a fork.
  17. Cut several small slits in the center to allow steam to escape during baking.
  18. Beat one egg together with one tablespoon of milk. Brush the entire top of the pastry generously.
  19. Preheat the oven to 400°F (200°C). Place the pie on a baking tray to catch any bubbling filling.
  20. Bake for 20 minutes.
  21. Reduce the oven temperature to 375°F (190°C). Continue baking for another 20 to 25 minutes until the crust is deeply golden and crisp.
