Ingredients

The Chicken & Oil

  • 4 bone-in, skin-on chicken thighs (approximately 2 to 2.5 pounds total) — Bone-in and skin-on cuts yield the best texture and juiciness during high-heat air frying.
  • 1 tablespoon extra-virgin olive oil or avocado oil — Used to help the seasonings adhere and promote an even, golden crisp.

The Dry Rub Seasoning Blend

  • 1 teaspoon kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika — Adds a subtle, rich smokiness and enhances the deep golden color.
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper (optional, adjust to taste for a mild kick)

Instructions

Step 1: Prepping and Drying the Chicken

  1. Thoroughly Dry the Skin: Remove the chicken thighs from the refrigerator and pat them completely dry on all sides using clean paper towels. Crucial Tip: Removing excess surface moisture is the single most important step in achieving ultra-crispy skin. Any residual water will create steam, preventing the skin from crisping up properly.
  2. Trim Excess Fat: Inspect the chicken thighs and trim off any dangling pieces of loose fat or loose skin around the edges, but leave the main skin intact to protect the meat underneath.

Step 2: Mixing the Seasoning Blend

  1. In a small mixing bowl, combine the kosher salt, black pepper, garlic powder, onion powder, smoked paprika, dried oregano, dried thyme, and cayenne pepper (if using). Stir the spices together with a fork until the mixture is uniform and free of lumps.

Step 3: Seasoning the Thighs

  1. Drizzle the extra-virgin olive oil evenly over all sides of the chicken thighs, using your hands to rub the oil gently into the skin and underneath the flaps where possible.
  2. Sprinkle the seasoning blend generously over the chicken thighs. Use about two-thirds of the spice mix on the skin side and the remaining third on the underside. Pat the spices gently into the skin so they adhere firmly. Allow the chicken to rest at room temperature for about 10 minutes while you preheat your appliance, allowing the salt to begin working into the meat.

Step 4: Preheating the Air Fryer

  1. Preheat your air fryer to 380°F (193°C) for 3 to 5 minutes. Preheating ensures that the chicken skin begins searing immediately upon contact with the basket, locking in juices and preventing sticking.

Step 5: Air Frying for Maximum Crispiness

  1. First Stage (Skin-Side Down): Carefully place the chicken thighs into the air fryer basket in a single layer, arranged skin-side down . Do not overcrowd the basket; cook in two batches if your air fryer is on the smaller side to ensure proper air circulation.
  2. Cook at 380°F for 15 minutes .
  3. Second Stage (Flipping): Open the basket and use tongs to carefully flip the chicken thighs over so they are now skin-side up . The skin should already be starting to tighten and render.
  4. Continue cooking at 380°F for an additional 10 to 12 minutes , or until the skin is deeply golden brown, blistered, and exceptionally crisp.

Step 6: Checking Internal Temperature and Resting

  1. Insert a digital meat thermometer into the thickest part of the meat, avoiding the bone. The internal temperature must reach at least 165°F (74°C) , though bone-in dark meat is often most tender and succulent when cooked closer to 175°F to 180°F (79°C–82°C) .
  2. Transfer the cooked chicken thighs to a wire rack set inside a baking sheet or onto a clean cutting board. Let them rest uncovered for 5 to 7 minutes before serving. Resting allows the internal juices to redistribute evenly throughout the meat rather than running out onto the plate.
