Ingredients

For the Sausages & Onions

  • 8 to 12 Premium Sausages: Quality pork sausages (such as Cumberland, Lincolnshire, or Italian pork/beef sausages) work best.
  • 3 Large Yellow or Brown Onions: Thinly sliced from root to tip.
  • 2 tbsp Olive Oil or Unsalted Butter: Divided between searing the sausages and softening the onions.
  • 1 tbsp Granulated or Brown Sugar: Helps kick-start the natural caramelization process in the slow cooker.

For the Rich Caramelized Onion Gravy

  • 2 cups (500 ml) Beef Stock / Broth: Low-sodium beef stock allows better control of the final saltiness.
  • 1 tbsp Worcestershire Sauce: Adds savory umami depth.
  • 1 tbsp Balsamic Vinegar: Provides an essential bright acidity to balance the sweetness of the onions.
  • 2 Garlic Cloves: Minced fine.
  • 1 tsp Dried Thyme (or 2 sprigs fresh thyme).
  • 1 Bay Leaf.
  • 2 tbsp Cornstarch (Cornflour) + 2 tbsp Cold Water: Slurry used to thicken the gravy at the end.
  • Salt & Freshly Cracked Black Pepper: To taste.

Instructions

Step 1: Sear the Sausages

  1. Place a large skillet over medium-high heat and add 1 tablespoon of olive oil or butter. Once hot, add the sausages. Sear for 4–6 minutes, turning occasionally, until a golden-brown crust develops on all sides.
  2. Chef’s Note: Searing locks in juices, improves texture, and prevents the sausage casings from becoming soft and grey in the steam of the slow cooker. Once seared, transfer the sausages directly into your slow-cooker insert.

Step 2: Soften the Onions

  1. In the same skillet, add the remaining tablespoon of oil or butter along with the sliced onions and sugar. Turn the heat down to medium and cook for 5 minutes, stirring frequently to scrape up any browned bits (fond) left by the sausages. The onions should start to soften and turn translucent. Transfer the onions into the slow cooker, scattering them over and around the seared sausages.

Step 3: Prepare the Gravy Base

  1. In a liquid measuring cup or bowl, whisk together the beef stock, Worcestershire sauce, balsamic vinegar, minced garlic, dried thyme, salt, and black pepper. Pour the liquid mixture over the sausages and onions in the slow cooker. Drop the bay leaf into the center.

Step 4: Slow Cook to Perfection

  1. Cover the slow cooker with its lid and set to your desired cooking intensity:
  2. Low Setting (Recommended): 5 to 6 hours for maximum depth of flavor and tender onions.
  3. High Setting: 2.5 to 3.5 hours for a quicker meal.

Step 5: Thicken the Gravy

  1. During the final 20–30 minutes of cooking, remove the bay leaf. In a small bowl, mix 2 tablespoons of cornstarch with 2 tablespoons of cold water until smooth. Pour the cornstarch slurry into the slow cooker, stirring gently into the sauce. Cover and cook on High for an additional 20–30 minutes until the gravy turns glossy and noticeably thickens.

Step 6: Serve and Enjoy

  1. Taste the gravy and adjust salt or pepper as needed. Serve hot over a bed of buttery mashed potatoes, steamed green beans, or roasted root vegetables.
