Step 1: Sear the Beef for Maximum Flavor

  1. Generously season your beef chuck roast on all sides with kosher salt and freshly ground black pepper.
  2. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  3. Sear the chuck roast for 3 to 4 minutes on each side, including the edges, until a deep, golden-brown crust forms. This step locks in flavor and creates a rich foundation for your gravy. Transfer the roast directly into your slow cooker.

Step 2: Build the Braising Liquid & Veggies

  1. In the same skillet (without wiping away the delicious beef fond), toss in your sliced onions and garlic. Sauté for 2 minutes until fragrant.
