Instructions

Step 1: Prepare the Stuffing

  1. In a small skillet over medium heat, wilt the chopped baby spinach with 1 minced clove of garlic for 1–2 minutes until soft. Excess water must be blotted dry with a paper towel.
  2. In a medium mixing bowl, combine the softened cream cheese, shredded mozzarella, grated parmesan, sautéed spinach, crumbled bacon, remaining minced garlic, dried oregano, red pepper flakes, salt, and black pepper.
  3. Mix thoroughly with a spatula until completely smooth and evenly incorporated. Set aside.

Step 2: Butterfly & Pocket the Chicken

  1. Place each chicken breast flat on a stable cutting board.
  2. Place one hand flat on top of the chicken breast. Using a sharp chef’s knife or utility knife, slice horizontally into the thickest part of the breast to create a pocket. Be careful not to cut all the way through the back or sides (stop about 1/2-inch from the edges).
  3. Season the outside and inside of each pocket with the blend of garlic powder, onion powder, smoked paprika, kosher salt, and black pepper.

Step 3: Stuff & Seal

  1. Divide the cream cheese stuffing into 4 equal portions (roughly 2–3 tablespoons per breast).
  2. Gently spoon the filling deep into each chicken pocket, spreading it evenly without overfilling.
  3. Press the cut edges together to close the pocket. Secure the edges with 2–3 wooden toothpicks per breast to prevent filling leakage during baking.

Step 4: Set Up the Breading Station

  1. Arrange 3 wide, shallow dishes in a line:
  2. Dish 1 (Flour): Mix 1/2 cup all-purpose flour with a pinch of salt and pepper.
  3. Dish 2 (Egg Wash): Whisk 2 large eggs together with 2 tablespoons of milk or water.
  4. Dish 3 (Crispy Panko): Combine 1.5 cups Panko breadcrumbs with 1/2 teaspoon Italian seasoning.

Step 5: Dredge and Coat

  1. Working with one stuffed breast at a time, gently coat it in the flour, shaking off any excess.
  2. Dip entirely into the egg wash, ensuring every corner is moistened.
  3. Transfer into the Panko dish, pressing the breadcrumbs firmly onto all sides of the chicken to build an even layer.
