Equipment

  • Air Fryer (5-quart capacity or larger recommended)
  • Large Mixing Bowl
  • Cutting Board and Chef’s Knife
  • Measuring Spoons
  • Tongs or Silicone Spatula

Ingredients

Main Ingredients

  • 12 oz (approx. 340g) Fully Cooked Chicken Sausage (such as smoked apple, roasted garlic, or Italian-style), sliced into 1/2-inch coins
  • 1 large Bell Pepper (red, yellow, or orange), seeded and cut into 1-inch bite-sized chunks
  • 1 medium Zucchini , ends trimmed, sliced into half-moons (about 1/2-inch thick)
  • 1 cup Broccoli Florets , chopped into small, bite-sized pieces
  • 1/2 medium Red Onion , cut into 1-inch wedges
  • 1 cup Yellow Squash or Baby Bella Mushrooms (optional, for extra veggie variety)

Seasoning & Oil Blend

  • 1.5 tablespoons Olive Oil or Avocado Oil (avocado oil works exceptionally well for high-heat air frying)
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Onion Powder
  • 1 teaspoon Italian Seasoning (or dried oregano/thyme blend)
  • 1/2 teaspoon Smoked Paprika (adds a rich, subtle smoky aroma)
  • 1/2 teaspoon Sea Salt (adjust to preference based on how salty your sausage is)
  • 1/4 teaspoon Freshly Ground Black Pepper
  • Fresh Parsley or Grated Parmesan Cheese (for optional garnish)

Instructions

Step 1: Preheat the Air Fryer

  1. Set your air fryer to 400°F (200°C) and preheat for 3 minutes . Preheating creates an immediate crisping environment the moment the veggies and sausage hit the hot basket.

Step 2: Chop the Ingredients

  1. On a sturdy cutting board, slice the pre-cooked chicken sausages into 1/2-inch round coins. Chop the bell pepper, red onion, zucchini, and broccoli into uniform, bite-sized chunks. Keeping the cut size consistent ensures that all the vegetables soften and caramelize at the exact same rate.

Step 3: Season the Mix

  1. In a large mixing bowl, combine the sliced chicken sausages and chopped vegetables. Drizzle evenly with 1.5 tablespoons of olive oil or avocado oil . Sprinkle the garlic powder, onion powder, Italian seasoning, smoked paprika, salt, and black pepper over the top. Toss thoroughly using tongs or clean hands until every piece is lightly coated in oil and spices.

Step 4: Arrange in the Air Fryer Basket

  1. Transfer the seasoned chicken sausage and vegetable mixture into your preheated air fryer basket. Spread everything out into an even single layer as much as possible.
  2. Note: If you have a smaller air fryer, cook in two separate batches rather than overcrowding the basket. Overcrowding steams the veggies instead of roasting them.

Step 5: Air Fry at High Intensity (400°F / 200°C)

  1. Slide the basket into the air fryer and cook at 400°F (200°C) for 12 to 15 minutes .

Step 6: Shake and Toss (At the 6–7 Minute Mark)

  1. At the halfway point (around 6–7 minutes), pull out the basket and give it a firm shake or flip the ingredients using tongs. This redistributes the contents so the edges of the veggies crisp evenly and the chicken sausage browns nicely on both sides. Continue air frying for the remaining 6 to 8 minutes until the sausage edges are golden and lightly crisped, and the veggies are tender with lightly charred edges.

Step 7: Garnish and Serve

  1. Once cooked, carefully remove the basket from the air fryer. Transfer the mixture to a serving platter. Garnish with chopped fresh parsley or a sprinkle of freshly grated Parmesan cheese if desired. Serve hot as a standalone low-carb meal, or pair with your favorite grains!
