  1. Prepare the Marinade: In a medium glass mixing bowl, whisk together the extra virgin olive oil, lemon juice, lemon zest, minced garlic, dried oregano, 1 tablespoon of chopped parsley, sea salt, and black pepper until well emulsified.
  2. Marinate the Salmon: Pat the salmon fillets completely dry with a paper towel. Place them in a shallow glass baking dish and pour the marinade evenly over them, coating both sides. Allow them to marinate at room temperature for 15 to 20 minutes (do not exceed 25 minutes to prevent the acid from softening the flesh).
