Ingredients

The Plumped Fruit & Spice Medley

  • 150 g (1 cup) Sultanas / Golden Raisins
  • 150 g (1 cup) Dark Raisins or Thompson Seedless Raisins
  • 100 g (⅔ cup) Dried Currants
  • 100 g (⅔ cup) Dried Cranberries (sweetened or unsweetened)
  • 75 g (½ cup) Glacé Cherries, rinsed, dried, and halved
  • 50 g (⅓ cup) Candied Mixed Citrus Peel, finely diced
  • Zest and juice of 1 large organic orange (approx. 80 ml juice)
  • Zest of 1 unwaxed lemon
  • 115 g (½ cup) Unsalted butter, cubed
  • 150 g (¾ cup) Dark brown muscovado sugar (or dark brown sugar)
  • 60 ml (¼ cup) Spiced dark rum, brandy, or black tea (for a non-alcoholic version)
  • 1 tsp Ground Ceylon cinnamon
  • ½ tsp Ground ginger
  • ¼ tsp Ground nutmeg, freshly grated
  • ¼ tsp Ground allspice
  • ⅛ tsp Ground cloves

The Batter Base

  • 3 large Eggs (room temperature, lightly beaten)
  • 200 g (1 ½ cups) All-purpose flour
  • 50 g (½ cup) Blanched almond flour (or finely ground almonds for texture and moisture)
  • 1 tsp Baking powder
  • ½ tsp Fine sea salt
  • 50 g (½ cup) Pecans or walnuts, roughly chopped (optional for crunch)
  • 1 tsp Pure vanilla bean paste or extract

Optional Finishing Glaze & Feed

  • 2 tbsp Orange marmalade (strained and warmed for brushing)
  • 2–3 tbsp Brandy or spiced rum (for post-bake feeding)

Instructions

Step 1: Plump and Infuse the Fruit Base

  1. In a medium, heavy-bottomed saucepan, combine the sultanas, dark raisins, currants, cranberries, halved glacé cherries, and diced candied citrus peel.
  2. Pour in the fresh orange juice, orange zest, lemon zest, dark rum (or black tea), dark brown sugar, cubed unsalted butter, and the ground spices (cinnamon, ginger, nutmeg, allspice, and cloves).
  3. Set the pan over medium-low heat. Stir continuously with a heatproof spatula until the butter melts entirely and the sugar dissolves completely into the liquid.
  4. Bring the liquid to a gentle simmer (tiny bubbles around the rim). Reduce heat to the lowest setting and simmer gently for 8 to 10 minutes, stirring occasionally. The fruit will absorb the liquid, swelling noticeably.
  5. Remove from heat and pour the mixture into a wide mixing bowl. Let it cool down to lukewarm (approx. 30–35 minutes). Critical intensity check: Do not add eggs to hot fruit syrup, or you will scramble the eggs.

Step 2: Prep the Pan and Oven

  1. Position an oven rack in the lower third of your oven. Preheat the oven to 150°C (300°F) for conventional bake, or 135°C (275°F) for a fan-assisted/convection setting.
  2. Lightly grease your 9 × 5-inch loaf pan with butter.
  3. Line the bottom and sides with a double layer of baking parchment paper, allowing about 1 inch (2.5 cm) of paper to extend above the rim on the longer sides. This creates “handles” for easy release and shields the outer edges from excessive browning during the extended bake.

Step 3: Combine and Fold the Batter

  1. Whisk the room-temperature beaten eggs and vanilla extract into the cooled fruit mixture until fully incorporated and glossy.
  2. In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and fine sea salt to disperse the leavening agent evenly.
  3. Tip the dry ingredients into the wet fruit mixture. Add the chopped pecans or walnuts if using.
  4. Using a wide silicone spatula, gently fold the mixture together using sweeping, J-shaped motions. Stop folding the second there are no visible streaks of dry flour remaining. Overmixing will develop gluten and turn the loaf rubbery. The batter will be thick, studded with fruit, and aromatic.

Step 4: Low-and-Slow Baking

  1. Scrape the batter into the prepared loaf pan, pressing it gently into the corners. Level the surface using the back of an offset spatula or damp spoon.
  2. Place the pan on the lower-third oven rack.
  3. Bake undisturbed for 1 hour and 15 minutes .
  4. Check the loaf at the 75-minute mark. If the top has reached a deep mahogany brown but needs more internal baking time, tent a loose sheet of aluminum foil over the top to prevent scorching.
  5. Continue baking for another 15 to 30 minutes (total bake time: 90 to 105 minutes).
  6. Test for doneness: Insert a long wooden skewer into the deep center of the loaf. It should come out clean or with a few moist, sticky crumbs attached—never raw, wet batter. Because the loaf is loaded with fruit, ensure you aren’t mistaking fruit pulp for unbaked batter.

Step 5: Post-Bake Infusion and Cooling

  1. Transfer the loaf pan to a wire cooling rack.
  2. If making a traditional preserved loaf, pierce the hot top surface lightly with a skewer and spoon 2 to 3 tablespoons of brandy or rum evenly across the warm surface. It will absorb instantly.
  3. Let the cake cool completely in the pan for at least 2 hours. Do not attempt to de-pan while hot, as the delicate structure needs time to set.
  4. Once room temperature, use the parchment handles to gently lift the loaf out of the pan. Brush the top with warmed, strained orange marmalade for a high-gloss bakery finish.
