Step 1: Prepare the Cod

  1. Pat the cod fillets completely dry with paper towels. This is a critical step. Removing moisture ensures a golden-brown sear rather than steamed fish.
  2. Cut the cod into 1.5 to 2-inch bite-sized chunks.
