- In the bowl of your food processor, combine the flour and salt. Pulse a couple of times to mix them together.
- Add the cold, cubed butter to the flour mixture. Pulse the food processor in short bursts until the butter is broken down into pea-sized pieces, and the mixture resembles a coarse meal.
- Add the freshly grated sharp cheddar cheese to the bowl and pulse a few more times until the cheese is just distributed throughout the flour-butter mixture.
- With the food processor running, slowly drizzle in the ice water, one tablespoon at a time, through the feed tube. Process just until the dough begins to clump together and form a ball around the blade.
- Turn the dough out onto a lightly floured surface. Gently gather it into a ball and then press it into a rough rectangular disc. Wrap the disc tightly in plastic wrap and refrigerate for at least 30 minutes.
- About 10 minutes before you are ready to bake, preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper.
- On a lightly floured surface, roll the chilled dough out into a rectangle, about ¼ inch thick. Trim the edges to make a neat rectangle. Cut the dough into strips about ½ inch to ¾ inch wide.
- Carefully transfer the strips to the prepared baking sheet, placing them about an inch apart. Bake for 12-15 minutes, or until the cheese straws are a beautiful, deep golden brown.
- Remove the baking sheet from the oven and let the cheese straws cool on the pan for a few minutes. Then, transfer them to a wire rack to cool completely.
