Step 1: Prepare the Ingredients

  1. Wash the lemons thoroughly. Slice one lemon into thin rounds for garnish if desired, then juice both lemons, removing any seeds. Peel the ginger root and slice it into thin pieces to maximize flavor extraction during simmering.

Step 2: Simmer the Ginger

  1. Pour the water into a medium saucepan and add the sliced ginger. If using cinnamon, add the cinnamon stick at this stage.
  2. Bring the water to a gentle boil over medium-high heat. Once boiling, reduce the heat to low and simmer gently for about 15 minutes. This allows the ginger to infuse the water with its warm, aromatic flavor.

Step 3: Steep

  1. Remove the saucepan from the heat and let the ginger steep for an additional 5 minutes. This deepens the flavor without making the tonic overly strong.

Step 4: Strain

  1. Pour the liquid through a fine-mesh strainer into a heatproof pitcher or jug, discarding the ginger slices and cinnamon stick.

Step 5: Add Lemon and Honey

  1. Allow the tonic to cool for a minute or two before stirring in the freshly squeezed lemon juice and honey. Mixing these ingredients after cooking helps preserve their fresh flavor.
  2. Stir well until the honey is completely dissolved.
  3. Taste and adjust the sweetness by adding a little more honey if desired, or add extra lemon juice for a brighter citrus flavor.

Step 6: Serve
