  • 1/2 cup cottage cheese
  • 1 1/2 cups milk of choice
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 4 teaspoons baking powder
  • 1 Tablespoon sugar
  • Cooking spray or butter, for greasing pan

Instructions

  1. Place the cottage cheese in a food processor. Blend for approximately 2 minutes, or until the cottage cheese becomes completely smooth.
  2. Transfer the blended cottage cheese to a medium bowl. Whisk in the milk, eggs, and vanilla extract until the wet mixture is evenly combined.
  3. In a separate large bowl, whisk together the all-purpose flour, baking powder, sugar, and ¼ teaspoon kosher salt as specified in the original preparation instructions.
  4. Add the cottage cheese mixture to the bowl of dry ingredients. Stir gently just until the ingredients come together. The batter should remain slightly lumpy rather than completely smooth.
