Ingredients

  • 500 g ground beef (or ground lamb)
  • 2 cups green cabbage, chopped
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 medium zucchini, diced
  • 2 tablespoons olive oil
  • 1 can (400 g) diced tomatoes (no added sugar)
  • 4 cups beef broth
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • ½ teaspoon cumin (optional)
  • Salt and black pepper to taste
  • 1 tablespoon tomato paste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the ground beef and cook until browned. Break it apart as it cooks.
  2. Add chopped onion and garlic. Cook for 2–3 minutes until fragrant and softened.
  3. Stir in tomato paste, paprika, oregano, cumin, salt, and pepper. Mix well to coat the meat.
  4. Add cabbage, zucchini, and diced tomatoes. Stir everything together.
  5. Add beef broth and bring to a boil.
  6. Reduce heat and let it simmer for 25–30 minutes until cabbage is tender and flavors are well combined.
  7. Taste and adjust seasoning. Garnish with fresh parsley before serving.
