Ingredients

- 1½ cups (150g) graham cracker crumbs (approx. 10 to 12 whole sheets, finely crushed)
- 3 tbsp (38g) granulated sugar
- 5 tbsp (70g) unsalted butter , melted and slightly cooled
- ¼ tsp ground cinnamon
- Pinch of fine sea salt
2. The Velvety Whipped Cheesecake Filling
- 16 oz (450g / 2 standard 8-oz blocks) full-fat brick cream cheese , softened to room temperature
- ¾ cup (90g) powdered confectioners’ sugar (dissolves instantly without graininess)
- 1 cup (240ml) heavy whipping cream (chilled cold straight from the fridge)
- ⅓ cup (80g) full-fat sour cream or plain Greek yogurt (adds authentic cheesecake tang)
- 1½ tsp pure vanilla extract
- 1 tbsp freshly squeezed lemon juice
3. The Sweet Strawberry Glaze Layer
- 1 can (21 oz / 595g) premium strawberry pie filling or glaze (OR Homemade Fresh Strawberry Compote: 3 cups diced fresh strawberries simmered with ¼ cup sugar, 1 tbsp lemon juice, and 1 tsp cornstarch for 6 minutes, then cooled completely)

Step 1: Prepare the Mason Jars (Intensity: Low)
- Wash and thoroughly dry eight 8-ounce wide-mouth mason jars.
- Set them out on your counter or a rimmed baking sheet. Wide-mouth jars make filling and spooning significantly easier than narrow-mouth jars.
Step 2: Mix & Tamp the Crumb Crust (Intensity: Low)
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, ground cinnamon, and sea salt.
- Pour in the melted unsalted butter and toss with a fork until the crumbs are evenly moistened and resemble damp sand.
- Spoon roughly 2 generous tablespoons of the crumb mixture into the base of each jar.
- Using a small flat-bottomed shot glass, tamper, or the back of a spoon, press the crumbs down firmly into an even, compact crust. Set the jars in the refrigerator to chill while preparing the filling.
Step 3: Whip the Heavy Cream (Intensity: Moderate Mechanical Speed)
- Pour the 1 cup of cold heavy whipping cream into a clean, chilled mixing bowl.
- Using a hand mixer or stand mixer fitted with the whisk attachment, whip on medium-high speed for 2 to 3 minutes until stiff peaks form (the cream should hold its shape firmly when the beaters are lifted).
- Set the whipped cream aside in the refrigerator.
Step 4: Beat the Sweetened Cream Cheese (Intensity: Moderate Focus)
- In a separate large bowl, beat the softened brick cream cheese on medium speed for 2 minutes until completely smooth, creamy, and free of lumps.
- Sift in the powdered sugar. Add the sour cream, pure vanilla extract, and lemon juice.
- Beat on medium-low speed for 1 minute until fully incorporated and silky, scraping down the sides and bottom of the bowl with a silicone spatula.
Step 5: Fold to Create the Fluffy Matrix (Intensity: Gentle / Low Mechanical Force)
- Add one-third of the chilled whipped cream into the cream cheese mixture. Stir gently with your spatula to lighten the base.
- Add the remaining two-thirds of the whipped cream.

- Spoon roughly 2 to 3 tablespoons of the strawberry topping over the cheesecake layer in each jar, spreading it gently to the edges with the back of a spoon.
- Place the flat metal lids on top of the jars and screw the metal ring bands down until fingertip-tight.
- Transfer the jars to the refrigerator and chill for a minimum of 4 hours (preferably overnight) . During this rest, the crust firms up, the cream cheese filling stabilizes into a spoonable custard, and the flavors meld together.
