Instructions

Step 1: Prep and Marinate the Beef

  1. Slice the flank steak against the grain into thin, 2-inch long strips.
  2. In a medium bowl, combine the sliced beef, 1 tablespoon soy sauce, 1 tablespoon cornstarch, 1 tablespoon sesame oil, and baking soda.
  3. Mix well until the beef is evenly coated. Set aside to marinate at room temperature for 10 to 15 minutes .

Step 2: Mix the Savory Stir-Fry Sauce

  1. In a measuring cup or small bowl, whisk together the ⅓ cup low-sodium soy sauce, beef broth, brown sugar, oyster sauce, rice vinegar, 1 tablespoon cornstarch, and black pepper until smooth.
  2. Set the sauce mixture aside near your cooking area.

Step 3: Blanch or Steam the Broccoli

  1. Bring a small pot of water to a boil, or place broccoli florets in a microwave-safe bowl with 2 tablespoons of water.
  2. Cook the broccoli for 1 to 2 minutes until bright green yet crisp-tender.
  3. Drain well and pat dry to avoid extra water diluting your stir-fry heat.

Step 4: High-Intensity Beef Sear

  1. Heat a large wok or heavy skillet over HIGH INTENSITY HEAT until lightly smoking.
  2. Add 1 tablespoon of high-smoke-point oil (vegetable or canola oil).
  3. Add the marinated beef in a single layer. Sear without moving for 1 to 2 minutes to build a rich brown crust.
  4. Stir-fry for another 1 minute until cooked through (around 80-90% done). Remove the beef from the wok and place it on a plate.

Step 5: Sauté Aromatics & Combine

  1. Reduce heat slightly to MEDIUM-HIGH INTENSITY . Add the remaining 1 tablespoon of oil to the wok.
  2. Toss in the minced garlic and minced ginger. Stir-fry constantly for 30 seconds until fragrant (be careful not to burn the garlic).
  3. Stir the sauce mixture quickly to resuspend any settled cornstarch, then pour it into the wok.
  4. Let the sauce boil for 1 minute until it thickens into a glossy glaze.

Step 6: Final Toss & Garnish

  1. Return the seared beef and blanched broccoli into the wok with the sauce.
  2. Toss continuously for 1 to 2 minutes on medium heat until everything is thoroughly coated in sauce and heated through.
  3. Remove from heat. Stir in chopped green onions and sprinkle with toasted sesame seeds before serving hot over cooked jasmine rice, brown rice, or noodles.
