Step 1: Preheat and Prep Your Oven
- Preheat your oven to 400°F (200°C). High heat is essential here—it allows the carrots to caramelize on the edges while keeping the asparagus tender-crisp rather than mushy. Line a large rimmed baking sheet with parchment paper or foil for effortless cleanup.
Step 2: Prepare the Carrots and Asparagus
- Wash and dry all your produce thoroughly.
- Peel the carrots and slice them uniformly. Because carrots take slightly longer to roast than asparagus, cut them into relatively thin diagonal rounds or matchsticks (about 1/4-inch thickness) so they cook at a similar rate.
- Hold each asparagus spear toward the bottom and snap off the tough, woody ends naturally. If the asparagus stalks are thick, you can slice them in half lengthwise.
Step 3: Season the Carrots First
- Place the sliced carrots directly onto one side of the prepared baking sheet. Drizzle them with 1 tablespoon of extra-virgin olive oil, half of the minced garlic, a pinch of salt, and pepper. Toss well with your hands to ensure every piece is evenly coated, then spread them out in a single layer.

Step 4: Add the Asparagus and Toss

Step 6: Add the Parmesan and Finish
- Remove the baking sheet from the oven. Immediately sprinkle the freshly grated Parmesan cheese evenly all over the hot vegetables. The residual heat will melt the cheese into a nutty, savory crust.
