Instructions
- Pat the pork chops dry using paper towels. Season both sides of the pork chops with salt, black pepper, paprika, and onion powder.
- In a small bowl, combine the minced garlic, brown sugar, olive oil, soy sauce, and chicken broth. Stir until the ingredients are well mixed and the brown sugar begins to dissolve.
- Place the seasoned pork chops in a single layer inside the slow cooker. Pour the garlic brown sugar mixture evenly over the top of the pork chops. Use a spoon to spread some of the mixture over each chop to ensure even coverage.
- Cover the slow cooker with the lid. Cook on Low Heat for 6–7 hours or High Heat for 3–4 hours. The pork chops are done when they are tender and reach an internal temperature of 145°F (63°C).
- If desired, remove the pork chops from the slow cooker and place them on a serving plate. In a small bowl, whisk together the cornstarch and water to create a slurry. Stir the slurry into the cooking liquid in the slow cooker. Cover and cook on High for an additional 10–15 minutes until the sauce thickens.
- Return the pork chops to the slow cooker or spoon the thickened sauce over the pork chops before serving. Garnish with fresh parsley if desired and serve warm.

Notes
Choose pork chops that are at least one inch thick to prevent overcooking. Fresh garlic is recommended for the best flavor. To store, keep leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. Reheat gently in the microwave or on the stovetop with a splash of broth. Variations include adding honey, red pepper flakes, or fresh herbs.
