Ingredients

  • 3 lbs Beef Chuck Roast or Stew Meat: Cut into 1.5-inch cubes. Chuck roast is ideal because its marbling breaks down during the long cook time, becoming fork-tender.
  • 2 tbsp Olive Oil: For searing.
  • 1 tsp Kosher Salt: (Plus more to taste).
  • 1 tsp Black Pepper: Freshly cracked is best.
  • 8–10 cloves Garlic: Freshly minced. Do not use the jarred stuff if you can help it; fresh garlic makes a massive difference here.
  • 1/2 cup Beef Broth: Low sodium preferred.
  • 1/4 cup Soy Sauce: This adds the necessary umami (savory depth). You can use coconut aminos for a gluten-free option.
  • 2 tbsp Worcestershire Sauce: For tang and complexity.
  • 2 tbsp Brown Sugar: To balance the saltiness and help with caramelization.
  • 1 tbsp Dijon Mustard: For a subtle tang.
  • 1 tsp Dried Thyme: Or 1 tbsp fresh thyme.
  • 1 tsp Dried Rosemary: Crushed between your fingers to release the oils.
  • 1 tsp Dried Oregano.
  • 1/2 tsp Red Pepper Flakes: Optional, for a gentle heat.
  • 3 tbsp Unsalted Butter: Cut into cubes. This is added at the end of cooking to create a glossy, rich sauce.
  • 2 tbsp Fresh Parsley: Chopped, for garnish.
  • 2 tbsp Cornstarch + 2 tbsp Water: (Optional slurry for thickening).

Instructions

Step 1: Prep the Beef (Intensity: Medium)

  1. Start by patting your beef cubes dry with a paper towel. This is a crucial step. If the beef is wet, it will steam rather than sear, and you will lose out on that deep, roasted flavor. Season the beef generously with the kosher salt and black pepper on all sides.

Step 2: Sear the Beef (Intensity: Medium-High)

  1. Note: While you can skip this step to save time, searing the meat is the single best thing you can do for flavor. It creates the Maillard reaction—that brown crust that tastes like pure savory goodness.
  2. Heat the olive oil in a large skillet over medium-high heat. Working in batches (do not overcrowd the pan, or the beef will boil), add the beef cubes. Sear for about 2–3 minutes per side until they are deeply browned. They do not need to be cooked through—just browned on the outside. Transfer the seared beef to your slow cooker.

Step 3: Deglaze and Build the Sauce (Intensity: Low)

  1. With the skillet still hot (but not burning), reduce the heat to medium. Pour in the beef broth. Use a wooden spoon to scrape up all the brown bits (fond) stuck to the bottom of the pan. This is where the flavor lives.
  2. Whisk in the soy sauce, Worcestershire sauce, brown sugar, Dijon mustard, minced garlic, thyme, rosemary, oregano, and red pepper flakes (if using). Let this mixture come to a gentle simmer for 2 minutes, just to marry the flavors.

Step 4: Slow Cook (Intensity: Very Low)

  1. Pour the sauce mixture over the beef in the slow cooker. Stir to coat the meat evenly. Cover the slow cooker.
  2. High Setting: Cook for 4 hours.
  3. Low Setting: Cook for 7–8 hours.
  4. The “Doneness” Test: The beef is done when it is fork-tender. It should shred easily when pressed with a fork but still hold its shape as a “bite.”

Step 5: The Butter Finish (Intensity: Low)

  1. This is the secret step that elevates the dish from “good stew” to “restaurant quality.”
  2. Once the beef is cooked, open the lid. If the sauce looks thin, you can create a slurry by mixing 2 tbsp of cornstarch with 2 tbsp of cold water and stirring it into the hot liquid. Let it cook on High for 10 minutes to thicken.
  3. Turn the slow cooker off (or to “Warm”). Drop in the cubed butter and stir gently until it melts into the sauce. The butter adds a velvety texture and a rich mouthfeel. Taste the sauce and adjust salt and pepper if needed.
