Instructions

Step 1: Form the Beef Patties

  1. In a large mixing bowl, combine the breadcrumbs, beaten egg, whole milk, Worcestershire sauce, garlic powder, onion powder, smoked paprika, kosher salt, and black pepper. Stir together and let sit for 2 minutes to allow the breadcrumbs to hydrate.
  2. Add the ground beef to the bowl. Using clean hands, gently work the ingredients together until just incorporated. Do not overmix , as working the meat too aggressively will yield dense, rubbery patties. Divide the mixture evenly into 6 equal portions (roughly 5 to 6 ounces each). Shape them into oval patties approximately 3/4-inch thick. Using your thumb, press a slight dimple into the center of each patty; this prevents them from puffing up into balls while cooking.

Step 2: Sear for Depth of Flavor (High Intensity)

  1. Set a large skillet over medium-high heat and add 1 to 2 tablespoons of neutral oil. Once shimmering, add 3 patties at a time to avoid overcrowding the pan. Sear for 3 to 4 minutes per side until a deep, golden-brown crust forms.
  2. Pro-Tip: You are not cooking the meat through at this stage; you are solely building flavor via the Maillard reaction. Searing also locks in moisture and keeps the patties from breaking apart during hours of slow cooking.
  3. Transfer the browned patties to a plate and repeat with the remaining patties. Remove the skillet from the heat, leaving the flavorful drippings behind.

Step 3: Layer the Slow Cooker

  1. Add about one-third of your sliced onions to the bottom of a 6-quart slow cooker. Carefully arrange the seared hamburger patties over the onions in a single or slightly overlapping layer. Scatter the remaining sliced onions and mushrooms (if using) evenly over and around the patties.

Step 4: Whisk and Pour the Braising Liquid

  1. In a medium bowl or measuring jug, whisk together 1 3/4 cups of beef broth (reserve the remaining 1/4 cup for later), Worcestershire sauce, soy sauce, minced garlic, Dijon mustard, and dried thyme. Pour the liquid evenly over the beef patties and vegetables.

Step 5: Slow Cook to Tender Perfection

  1. Cover the slow cooker with its lid and set to your desired heat intensity:
  2. Low Intensity Setting: Cook for 5 to 6 hours . This slower, gentler braise allows the collagen in the beef to break down softly, resulting in the juiciest, most fork-tender hamburger steaks.
  3. High Intensity Setting: Cook for 3 to 3.5 hours if you are short on time.
  4. Avoid lifting the lid during the cooking cycle so steam and heat remain trapped inside.

Step 6: Thicken the Gravy

  1. Once the cooking cycle is complete, carefully transfer the hamburger steaks to a warm platter using a slotted spatula and tent loosely with foil.
  2. In a small bowl, whisk together the 3 tablespoons of cornstarch with 3 tablespoons of cold water until smooth. Pour this slurry directly into the bubbling cooking liquid and onions inside the slow cooker. Turn the slow cooker setting to High , leave the lid off, and stir gently with a whisk or wooden spoon. Allow the gravy to simmer for 10 to 15 minutes until visibly thickened, glossy, and clinging to the back of a spoon. Stir in the 2 tablespoons of cold unsalted butter until melted.
  3. Return the hamburger steaks back into the slow cooker, spooning the thick onion gravy generously over the top. Garnish with chopped fresh parsley before serving.
