Equipment

Ingredients

For the Sausages & Onions:

  • 8 to 12 High-Quality Pork Sausages (e.g., Cumberland, Lincolnshire, or thick Italian/bratwurst)
  • 1 tbsp Olive Oil or Vegetable Oil
  • 3 Large Yellow or Brown Onions , sliced into thin half-moons
  • 3 cloves Garlic , finely minced

  • 1 tbsp Balsamic Vinegar or Worcestershire Sauce

For the Rich Gravy:

  • 2 ½ cups (600ml) Low-Sodium Beef Stock
  • 1 tbsp Tomato Paste
  • 1 tsp Dried Thyme (or 3 sprigs of fresh thyme)
  • 1 Dried Bay Leaf
  • ½ tsp Freshly Ground Black Pepper
  • ½ tsp Sea Salt (adjust to taste)

For Thickening:

  • 2 tbsp Cornstarch (or All-Purpose Flour)
  • 3 tbsp Cold Water

Instructions

Step 1: Sear the Sausages

  1. Heat olive oil in a large skillet over medium-high heat .
  2. Add the sausages in a single layer and sear for 6 to 8 minutes , turning occasionally, until golden brown on all sides. (Intensity note: You do not need to cook the sausages all the way through at this stage; searing creates a deep crust that seals in juices and enriches the gravy color.)
  3. Transfer the seared sausages directly into the slow cooker basin.

Step 2: Soften and Caramelize the Onions

  1. Reduce the skillet heat to medium .
  2. Add the sliced onions to the remaining pan drippings. Cook for 5 to 7 minutes , stirring frequently, until soft and lightly browned around the edges.
  3. Stir in the minced garlic and brown sugar, cooking for 1 additional minute until fragrant.
  4. Pour in the balsamic vinegar (or Worcestershire sauce) to deglaze the skillet, using a wooden spoon to scrape up any flavorful browned bits ( fond ) stuck to the bottom.
  5. Transfer the cooked onion mixture into the slow cooker, spreading it evenly over and around the sausages.

Step 3: Mix the Gravy Base

  1. In a measuring jug or bowl, whisk together the beef stock, tomato paste, dried thyme, bay leaf, black pepper, and salt.
  2. Pour the broth mixture directly over the sausages and onions in the slow cooker.

Step 4: Slow Cook to Perfection

  1. Cover the slow cooker with its lid.
  2. Set to cook on LOW for 6 to 8 hours or on HIGH for 3 to 4 hours .
  3. During this time, the onions will break down into sweet, melting strips and the sausages will absorb the aromatic broth.

Step 5: Thicken the Gravy

  1. 30 minutes before serving, whisk together the cornstarch and cold water in a small bowl until completely smooth to make a slurry.
  2. Gently stir the slurry into the liquid around the sausages in the slow cooker.
  3. Cover and cook on HIGH for 20 to 30 minutes until the gravy thickens to a glossy, coat-the-back-of-a-spoon consistency.
  4. Remove and discard the bay leaf. Taste the gravy and adjust salt or pepper if needed.

Step 6: Serve Warm

  1. Spoon a generous portion of creamy mashed potatoes onto a dinner plate or shallow bowl.
  2. Arrange 2 sausages per serving over the potatoes and ladle a lavish amount of thick onion gravy over the top.
  3. Garnish with chopped fresh parsley or fresh thyme leaves.
