Instructions

Phase 1: Mixing and Hydrating the Batter

  1. Combine Dry Ingredients: In a large mixing bowl, whisk together 1 cup cornmeal, 1 cup all-purpose flour, 1 tbsp sugar, 1 tsp baking powder, ½ tsp baking soda, and ½ tsp fine sea salt until evenly distributed.
  2. Blend Wet Ingredients: In a separate medium bowl or liquid measuring cup, whisk the beaten egg into 1 cup of buttermilk.
  3. Incorporate: Pour the wet mixture into the center of the dry ingredients. Stir with a wooden spoon or spatula until just combined.
  4. Adjust Thickness: Stir in hot water 1 tablespoon at a time until you achieve a thick, pourable pancake batter consistency.
  5. Rest Batter: Let the batter sit undisturbed at room temperature for 10 minutes . This allows the cornmeal starches to swell, preventing a gritty texture in the final hoecake.

Phase 2: Frying the Hoecakes

  1. Heat Skillet: Place a large cast-iron skillet or heavy-bottomed griddle over medium heat. Add 1 to 2 tablespoons of butter, bacon grease, or oil. Allow the fat to melt and coat the bottom of the pan evenly until shimmering.
  2. Ladle Batter: Portion roughly ¼ cup of batter per hoecake onto the hot skillet, leaving at least 1 to 2 inches of space between each cake. Use the back of a ladle or spoon to gently spread the batter into round patties about ¼-inch thick.
  3. First Side Fry: Fry over medium heat for 3 to 4 minutes . Look for edges that turn crisp and deep golden brown, with small bubbles breaking on top of the batter.
  4. Flip and Finish: Carefully slide a thin spatula underneath the cake and flip. Fry the second side for an additional 2 to 3 minutes until golden-brown and crisp on both sides.
  5. Drain and Repeat: Transfer cooked hoecakes to a warm platter lined with paper towels to drain excess surface oil. Add remaining fat to the skillet and repeat with the rest of the batter.
