Ingredients

  • 2 ribeye or sirloin steaks (8-10 oz each)
  • 4 large eggs
  • 1 lb baby potatoes, halved
  • 1 bunch asparagus, trimmed
  • 2 cups broccoli florets
  • 8 oz mushrooms, quartered
  • 1 cup cherry tomatoes
  • 3 tablespoons olive oil, divided
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 1 tablespoon butter for frying eggs

Instructions

  1. Preheat oven to 425°F. Toss potatoes with 1 tablespoon olive oil, half the salt, and pepper on a baking sheet. Roast for 10 minutes.
  2. Add asparagus, broccoli, mushrooms, and cherry tomatoes to the baking sheet. Drizzle with another tablespoon of olive oil and season with remaining salt and pepper. Toss and spread in a single layer. Roast for another 15-20 minutes until golden and slightly charred.
  3. While vegetables roast, pat steaks dry with paper towels and season generously with salt and pepper. Let sit at room temperature for 10 minutes. Heat a cast iron skillet over high heat until smoking.
  4. Add the remaining tablespoon of olive oil to the hot pan. Sear steaks for 3-4 minutes per side for medium-rare (130°F internal temperature). Remove and rest for 5 minutes.
  5. Reduce heat to medium and add butter to the same pan. Crack eggs into the pan and cook for 2-3 minutes until whites are set but yolks are runny. Cover with a lid for the last minute if desired.
  6. Slice rested steak against the grain into thick strips. Plate the steak, eggs, and roasted vegetables together.

Optional additions include fresh garlic, thyme, rosemary, red pepper flakes, or parmesan. For a keto version, skip potatoes and double low-carb vegetables. Leftovers can be stored in separate containers for up to 3 days; reheat steak gently in a skillet and microwave vegetables.
