1. Preparation & Pan Setup
- Heat your oven to 400°F (200°C) with the rack adjusted to the middle position.
- Line a 9×13-inch baking pan with parchment paper, leaving a 2-inch overhang on the longer sides. This parchment “sling” makes lifting the hot bars out clean and effortless.
- Lightly brush the parchment with 1 tablespoon of melted butter to ensure bottom-crust browning.
2. Assemble the Bottom Crust
- Lightly flour your work surface. Unroll the first sheet of puff pastry and gently roll it out to roughly 10×14 inches so it fits into the pan and climbs about ½ inch up the sides.
- Transfer the rolled sheet into the prepared pan. Dock the entire surface gently with a fork (piercing shallow holes every inch) to prevent uneven bubbling during baking.
- Sprinkle ½ cup of the shredded sharp white cheddar evenly across the surface. This creates a tacky adhesive layer for the cheese sticks.
3. Layer the Cheese Stick Core
- Arrange the 12 whole mozzarella string cheese sticks horizontally across the pan, lining them up side by side in parallel rows with only a slight gap between each.
- Scatter the remaining 1 cup of sharp cheddar and ½ cup of provolone over and around the mozzarella sticks, tucking the shreds into any open gaps to ensure a continuous molten center.
4. Seal with the Top Crust
- Roll out the second puff pastry sheet to match the dimensions of the first (10×14 inches).
- Drape it carefully over the cheese layer. Press down gently with your palms between the contours of the cheese sticks to push out trapped air pockets.
- Crimp and tuck the edges inward along the perimeter of the pan to create a tightly sealed border.

5. Prepare the Crackle Topping

6. Bake to a Golden Crackle
- Place the pan in the preheated oven at 400°F (200°C) .
- Bake for 22 to 26 minutes .
- Keep a close eye at the 18-minute mark: the top should be deep golden brown, audibly crackling, and cheese should just begin bubbling along the perimeter. If the topping is browning too fast before the pastry puffs fully, tent a sheet of aluminum foil loosely over the top for the final 5 minutes.
7. Rest, Slice, and Garnish
- Remove from the oven and immediately set the pan on a wire rack.
- Let the bars rest undisturbed for 10 to 12 minutes . Skipping this step will cause the hot, liquefied cheese to run out completely when cut; resting allows the cheeses to set into a sliceable, gooey consistency.
- Use the parchment paper sling to lift the entire block onto a sturdy wooden cutting board.
- Scatter the fresh chopped parsley and a light pinch of flaky sea salt across the top.
