A low-carb crepe recipe designed to be thin, flexible, and easy to roll without tearing, using eggs and cream cheese to mimic the structure of traditional flour-based crepes.

Equipment

  • Non-stick pan
  • Blender

Ingredients

  • Eggs
  • Cream cheese
  • Liquid (water, milk, or low-carb alternative)
  • Low-carb flour (almond or coconut, optional)

Instructions

  1. Blend ingredients until the batter is completely smooth and thin, similar to light cream.
  2. Heat a non-stick pan over moderate heat.
  3. Pour batter into the pan and spread immediately by tilting in a circular motion to create a thin, even layer.
  4. Cook until the crepe sets from the edges inward and loses its wet appearance, aiming for a pale surface with slight golden spots.
  5. Gently flip the crepe once it can be lifted easily and cook the second side briefly, usually in less than a minute.
  6. Remove from heat once the crepe is soft and pliable.

Notes

The crepe should bend easily without cracking. It can be stored stacked and covered to retain softness and reheated gently. Flavor is neutral, suitable for savory or sweet fillings.
