- Lightly spray the inside of your slow cooker with non-stick cooking spray.
- In a medium-sized bowl, whisk together the can of cream of chicken soup and the 1 ½ cups of low-sodium chicken broth until the mixture is smooth and well-combined.
- Place the 4 boneless, skinless chicken breasts in a single layer on the bottom of the prepared slow cooker. Pour the creamy soup and broth mixture evenly over the chicken, ensuring each piece is coated.
- Evenly sprinkle the entire contents of the dry stuffing mix box over the top of the chicken and soup mixture. Spread it out so it covers the surface as evenly as possible. Do not stir.
- Put the lid on your slow cooker. Cook on LOW for 3-4 hours or on HIGH for 1.5-2 hours. The dish is done when the chicken is cooked through (internal temperature of 165°F) and the stuffing has absorbed the liquid and is soft and fluffy.
- Turn off the slow cooker and let the dish rest for about 5-10 minutes. Serve warm, spooning the creamy gravy from the bottom of the pot over the chicken and fluffy stuffing.

Notes
You can swap chicken breasts for thighs, use cream of mushroom or celery soup, or add frozen vegetables to the bottom of the slow cooker. Leftovers can be stored in the refrigerator for up to 3-4 days and reheated in the microwave or a 350°F oven.
