Instructions

Step 1: Drain and Rinse

  1. Open both cans of potatoes and pour the contents into a colander. Rinse the potatoes thoroughly under cold running tap water for 30 seconds. Rinsing removes the residual canning brine and excess surface starch, which prevents soggy skin during cooking.

Step 2: The Critical Drying Phase

  1. Transfer the rinsed potatoes onto a double layer of paper towels or a clean cotton tea towel. Gently press down on each potato and roll them around until completely dry. For maximum crispiness, let them sit exposed to room air for 5 minutes.
  2. Chef’s Tip: Water is the enemy of crispiness! If the potatoes are wet when entering the air fryer, they will steam rather than crisp.

Step 3: Optional Slicing / Halving

  1. Leave small tinned potatoes whole, or slice larger ones in half to expose the soft interior. Sliced halves create flat surfaces that caramelize directly against the air fryer basket floor.

Step 4: Seasoning & Coating

  1. In a large mixing bowl, add the dry potatoes. Drizzle evenly with 1.5 tablespoons of olive oil . Sprinkle in the garlic powder, onion powder, smoked paprika, dried oregano, salt, and black pepper. Toss vigorously until every potato is uniformly coated in oil and spices.

Step 5: Preheat the Air Fryer

  1. Set your air fryer to 200°C (400°F) and let it preheat for 3 minutes. Preheating ensures immediate searing when the potatoes land in the basket.

Step 6: Load the Basket

  1. Arrange the seasoned potatoes in a single layer inside the air fryer basket. Ensure they are spread out with space between them. Do not overcrowd the basket; if necessary, cook in two separate batches.

Step 7: Air Fry (The 20-Minute Cook Cycle)

  1. Minutes 0 to 10: Air fry at 200°C (400°F) untouched.
  2. At 10 Minutes: Pull the basket out and give it a firm shake or flip the potatoes using tongs to redistribute heat evenly.
  3. Minutes 10 to 20: Return to the air fryer for the final 10 minutes.
  4. (If adding Parmesan cheese, sprinkle it over the potatoes at minute 18 and return to cook for the final 2 minutes until bubbling and golden.)

Step 8: Serve Immediately

  1. Transfer the hot, crispy potatoes to a serving dish. Garnish with freshly chopped parsley and a pinch of flaky sea salt.
