Instructions

Step 1: Prepare the Lamb Chops

  1. Pat the lamb chops completely dry with paper towels. This step is crucial for achieving a proper sear rather than steaming the meat . In a small bowl, mix the olive oil, rosemary, thyme, salt, and black pepper. Rub this mixture evenly over both sides of the lamb chops.

Step 2: Preheat the Air Fryer

  1. Set your air fryer to 400°F (200°C) and preheat for 3 minutes . Preheating ensures the chops begin searing immediately upon contact with the hot basket .

Step 3: Make the Garlic Butter

  1. While the air fryer heats, combine the softened butter, minced garlic, chopped parsley, and lemon zest in a small bowl. Mix until smooth and set aside .

Step 4: Air Fry the Lamb Chops

  1. Arrange the seasoned lamb chops in a single layer in the air fryer basket. Do not overcrowd; cook in batches if necessary. Air fry at 400°F for 6 minutes , then flip the chops and continue cooking for another 4 to 6 minutes for medium-rare .
  2. Intensity and Doneness Guide:
  3. Medium-Rare (Recommended): 10–12 minutes total, internal temperature of 130°F–135°F
  4. Medium: 12–14 minutes total, internal temperature of 140°F
  5. Note: The meat will continue cooking slightly during resting, so pull the chops about 5 degrees before your target temperature .

Step 5: Finish and Rest

  1. Remove the lamb chops from the air fryer and immediately top each with a generous spoonful of the garlic butter. Let them rest for 2 to 3 minutes so the juices redistribute and the butter melts into the meat . Serve hot with lemon wedges and extra parsley.
