Honey-Glazed Roasted Veggie Medley

A caramelized mix of butternut squash, carrots, broccoli, and Yukon potatoes with feta, pecans, and a cranberry-honey glaze, prepared in an air fryer.

Ingredients

  • 2 cups Butternut Squash, peeled, seeded, and cut into 3/4-inch cubes
  • 1.5 cups Carrots, peeled and sliced into 1/2-inch rounds or half-moons
  • 2 cups Broccoli Florets, cut into bite-sized pieces
  • 1.5 cups Yukon Gold Potatoes, washed and diced into 3/4-inch cubes
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Dried Thyme
  • 1/2 teaspoon Smoked Paprika
  • 1 teaspoon Kosher Salt
  • 1/2 teaspoon Freshly Ground Black Pepper
  • 2 tablespoons Honey
  • 1 tablespoon Dried Cranberries, finely chopped
  • 1 tablespoon Apple Cider Vinegar
  • 1/4 cup Feta Cheese, crumbled
  • 1/4 cup Pecans, chopped and lightly toasted
  • 1 tablespoon Fresh Parsley, minced

Instructions

  1. Wash vegetables. Peel butternut squash and remove seeds. Dice squash and potatoes into 3/4-inch cubes, slice carrots into 1/2-inch rounds, and break broccoli into florets.
  2. Place all vegetables in a large mixing bowl. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, thyme, and smoked paprika. Toss until evenly coated.
  3. Preheat the air fryer to 390°F (200°C) for 3 to 5 minutes.
  4. Place squash, carrots, and potatoes in the air fryer basket in a single layer. Cook at 390°F (200°C) for 10 minutes.
  5. Add broccoli florets to the basket, shake to redistribute, and cook for an additional 10 to 12 minutes until potatoes are fork-tender and edges are caramelized.
  6. While vegetables cook, whisk together honey, apple cider vinegar, and chopped cranberries in a small bowl.
  7. Transfer roasted vegetables to the mixing bowl. Pour the glaze over the warm vegetables and toss gently to coat.
  8. Transfer to a serving platter. Top with crumbled feta, toasted pecans, and minced parsley. Serve immediately.

Notes

Do not overcrowd the air fryer basket to avoid steaming; cook in batches if necessary. Keep squash and potato sizes consistent for even cooking. For a vegan version, omit feta or use a dairy-free alternative.
