Instructions
Step 1: Make the Blueberry Syrup
- Combine the blueberries, honey, and ½ cup of water in a small saucepan.
- Bring the mixture to a gentle simmer over medium heat.
- Cook for about 8 minutes, stirring occasionally, until the blueberries burst and release their juices.
- Lightly mash the berries with the back of a spoon to extract as much flavor as possible.
Step 2: Strain the Syrup
- Pour the cooked blueberry mixture through a fine-mesh strainer into a bowl or measuring cup.
- Press gently with the back of a spoon to extract the flavorful juice.
- Discard the skins and seeds or save them to stir into yogurt or oatmeal.
- Allow the syrup to cool completely.
Step 3: Mix the Refresher
- In a large pitcher, combine the cooled blueberry syrup, lemon juice, and lime juice if using.
- Stir until well mixed.
- Slowly pour in the chilled sparkling water or still water.
- Mix gently to preserve the bubbles if using sparkling water.
Step 4: Chill
- Refrigerate the refresher for at least 30 minutes so the flavors blend together and the drink becomes thoroughly chilled.
Step 5: Serve
- Fill serving glasses with ice cubes.
- Pour the Blueberry Refresher over the ice.
- Garnish with fresh blueberries, lemon slices, mint leaves, and lime slices if desired.
- Serve immediately while cold.
