Ingredients
- 4 medium raw beets (Red, Golden, or Chioggia), washed and peeled

- ¼ tsp garlic powder
- ¼ tsp cracked black pepper
- Optional: ½ tsp smoked paprika or rosemary for extra flavor

- Slice Thinly: Use a mandoline slicer set to 1/16-inch thickness. Uniform slice thickness ensures even cooking across the entire batch.
- Draw Out Moisture: Place the sliced beets on paper towels. Sprinkle lightly with sea salt and let sit for 10 minutes. Pat thoroughly dry with paper towels to extract excess liquid.
- Oil & Season: Transfer dried beet slices to a mixing bowl. Toss gently with olive oil, garlic powder, black pepper, and extra spices until lightly coated.
- Preheat Air Fryer: Set air fryer to 300°F (150°C) and preheat for 3 minutes.
- Arrange & Cook: Place slices in the air fryer basket in a single layer (slight overlap is okay). Cook for 16–20 minutes, shaking the basket every 5 minutes to prevent sticking and ensure even air circulation.
- Cool to Crisp: Remove chips when edges curl and feel slightly firm. Transfer to a wire cooling rack for 5 minutes; they will crisp up further as they cool.
