Ingredients

  • 2 lbs (approx. 900g) chicken wings, split into flats and drumettes, tips removed

Instructions

  1. Rinse chicken wings under cold water if needed, then pat dry thoroughly with paper towels. Let rest on the counter for 10 minutes to remove refrigerator chill.
  2. Set up three breading stations: whisk flour with garlic powder, onion powder, smoked paprika, salt, black pepper, and cayenne; whisk eggs with milk and hot sauce; stir panko with Parmesan, oregano, and salt.
  3. Dredge each wing in the seasoned flour, shaking off excess. Dip into the egg wash for complete coverage, letting excess drip off. Coat in the panko mixture, pressing gently to secure the crust.
  4. Preheat the air fryer to 380°F (193°C) for 3 to 5 minutes.
  5. Lightly mist the air fryer basket with oil spray. Arrange wings in a single layer with at least ½ inch of space between pieces. Lightly mist the tops of the wings with oil spray.
  6. Cook at 380°F (193°C) for 12 minutes. Remove the basket, flip each wing, and spritz any dry patches with oil. Return to the air fryer and cook for an additional 8 minutes at 380°F.
  7. Increase the temperature to 400°F (204°C) and cook for a final 3 to 5 minutes until the crust is deep golden-brown and the internal temperature reaches at least 165°F (74°C).

Do not overcrowd the air fryer basket, as this causes steaming rather than frying. Use a refillable pump-spray bottle for oil to avoid damaging nonstick coatings with aerosol propellants. For maximum crunch, use panko instead of standard breadcrumbs. Leftovers can be stored in the refrigerator for 3-4 days or frozen for up to 2 months.
