A medium-difficulty air fryer recipe that delivers a crunchy herb panko crust with juicy chicken inside, balanced by a sweet heat and citrus brightness from a hot honey lemon glaze. The dish features layers of intensity including high crispness, medium-high sweetness, and adjustable heat.
Ingredients
- 2 large boneless skinless chicken breasts (sliced into thin cutlets)
- 1 cup buttermilk (or yogurt + milk mix)
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tbsp lemon juice
- 1 cup panko breadcrumbs
- ½ cup grated Parmesan cheese
- ½ cup crumbled feta cheese
- 2 tbsp chopped fresh parsley
- 1 tbsp chopped fresh thyme (or dried 1 tsp)
- 1 tsp dried oregano
- ½ tsp chili flakes (optional for heat)
- ½ tsp salt
- ½ tsp black pepper
- ½ cup all-purpose flour
- 2 large eggs (beaten)
- 1 tbsp water
- ⅓ cup honey
- 1–2 tsp chili flakes or hot sauce (adjust heat intensity)
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1 tsp olive oil
- Pinch of salt
Instructions
- Slice the chicken breasts horizontally into thin cutlets to ensure even cooking and maximum crisp surface area.
- In a bowl, mix buttermilk, salt, pepper, paprika, garlic powder, and lemon juice.
- Add the chicken cutlets and coat well. Cover and refrigerate for at least 30 minutes (or up to 4 hours for deeper flavor infusion).
- In a large bowl, combine panko breadcrumbs, Parmesan, crumbled feta, parsley, thyme, oregano, chili flakes, salt, and pepper. Mix until evenly distributed.
- Prepare three shallow bowls with flour, beaten eggs + water, and the herb crust mixture.
- Remove chicken from marinade and lightly shake off excess liquid.
- Coat each cutlet in flour (light dusting), then egg mixture (full coating), then herb crust mixture (press firmly for full coverage). For extra crunch, repeat egg + crust layer once more.
- Preheat your air fryer to 190°C (375°F) for 3–5 minutes. Lightly spray the basket with oil to prevent sticking.
- Place cutlets in a single layer (do not overcrowd). Lightly spray tops with olive oil.
- Cook at 190°C (375°F) for 10 minutes.
- Flip carefully and continue cooking at 200°C (390°F) for 5–8 minutes until the crust is deep golden brown and crispy and the internal temperature reaches 74°C (165°F).
- Optional: For extra crunch, bake in oven at 220°C (428°F) for 2–3 minutes after air frying.
- In a small saucepan over low heat, warm honey gently. Add chili flakes or hot sauce.
- Stir in lemon juice, lemon zest, olive oil, and pinch of salt. Heat for 2–3 minutes only—do not boil.
- Place crispy chicken cutlets on a serving plate. Drizzle generously with hot honey lemon glaze.
- Sprinkle extra feta and fresh parsley on top for brightness and contrast.
Notes
Always pat chicken dry before breading for maximum crispiness. Press crust firmly so it adheres well during air frying. Do not overcrowd the air fryer basket. Adjust chili level based on heat tolerance. Let chicken rest 3–5 minutes before serving for juiciness retention. Pairs well with roasted vegetables, garlic mashed potatoes, lemon rice, or fresh green salad. For a sandwich version, place the cutlet in a toasted brioche bun with slaw and extra hot honey drizzle.
