A quick and easy breakfast recipe featuring fluffy eggs in crispy tortilla shells, cooked in the air fryer. Perfect for meal prep or busy mornings.
Ingredients
- 4 small flour tortillas (6-inch)
- Cooking spray
- 4 large eggs
- ¼ cup milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
- ½ cup shredded cheddar cheese
- ¼ cup diced bell peppers
- ¼ cup diced onions
- ¼ cup cooked bacon, crumbled
- 2 tablespoons chopped green onions

- Lightly spray the silicone muffin cups or ramekins with cooking spray.
- Press one tortilla into each cup, shaping it into a bowl. The edges will fold naturally, creating a rustic cup shape.
- Preheat your air fryer to 350°F (175°C) on Medium Heat for approximately 3 minutes.
- In a medium mixing bowl, combine eggs, milk, salt, black pepper, and garlic powder. Whisk thoroughly until smooth and slightly frothy.
- Stir in shredded cheddar cheese, bell peppers, onions, bacon, and green onions. Mix gently to distribute the ingredients evenly.
- Carefully spoon the egg mixture into each tortilla shell. Fill each cup approximately three-quarters full.
- Place the filled cups into the air fryer basket.
- Cook at 350°F (175°C) for 10–12 minutes on Medium Heat. Check at the 10-minute mark; the eggs are done when fully set, the centers no longer jiggle, the tortilla edges are golden brown, and the cheese is melted. If needed, cook for an additional 1–2 minutes.
- Carefully remove the egg cups from the air fryer and allow them to cool for 2–3 minutes.
- Use a spoon or small spatula to gently lift the cups from the molds.

Tips: Use small tortillas for better fit, don't overfill as eggs expand, pre-cook high-moisture vegetables, use silicone molds for easier removal, and let them rest to hold shape. Storage: Refrigerate in an airtight container for up to 4 days or freeze individually for up to 2 months. Reheat in air fryer at 320°F (160°C) for 3–4 minutes or microwave for 30 seconds.
