If you are looking for a breakfast that is high in protein, endlessly customizable, and practically effortless to clean up, these Air Fryer Omelet Cups are about to become your new morning go-to. Whether you are meal-prepping for a busy work week or need a satisfying low-carb breakfast that comes together in under 15 minutes, this recipe delivers exceptional flavor and a fluffy, tender texture without ever turning on the stove. Using your air fryer to bake eggs creates a wonderful, soufflé-like texture on the edges while keeping the center moist and tender. Plus, individual portions mean everyone in the family can customize their mix-ins.

Ingredients

  • 4 large eggs (fresh and at room temperature for the fluffiest results)
  • 2 tablespoons heavy cream or whole milk (for richness)
  • 1/2 cup shredded cheddar cheese or Monterey Jack (divided)
  • 1/4 cup cooked and crumbled bacon, breakfast sausage, or diced ham
  • 1/4 cup finely diced bell peppers, spinach, or mushrooms
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • a pinch of garlic powder
  • Cooking spray or melted butter for greasing the cups

Instructions

  1. Preheat your air fryer to 350°F (175°C) for about 3 to 5 minutes so it is hot and ready to bake evenly. Generously grease four silicone muffin cups with cooking spray or butter to prevent the eggs from sticking. Place them on the counter or directly on a small tray that fits into your air fryer basket.
  2. Crack the 4 large eggs into a medium-sized mixing bowl. Add the heavy cream (or milk), salt, black pepper, and garlic powder. Whisk vigorously for about 30 to 45 seconds until the mixture is completely uniform, slightly pale, and frothy. This incorporates air, which helps the omelet cups rise and stay light.
  3. Divide your cooked protein (bacon, sausage, or ham) and diced vegetables evenly among the bottom of the four greased silicone cups. Sprinkle half of the shredded cheese directly over the mix-ins.
  4. Carefully pour the whisked egg mixture over the ingredients in each cup, filling them up to about 3/4 full to leave room for expansion during cooking. Top each cup with the remaining shredded cheese for a golden, bubbly crust.
  5. Carefully transfer the silicone cups into the preheated air fryer basket. Cook at 350°F (175°C) for 8 to 10 minutes. Check for doneness at the 8-minute mark. The edges should be set and puffed, and the center should be completely cooked through with no liquid jiggle. If needed, cook for an additional 1 to 2 minutes.
  6. Remove the cups carefully from the air fryer using tongs or heat-resistant gloves. Let them cool in the silicone molds for 2 to 3 minutes (they will deflate slightly as they cool, which is completely normal). Run a butter knife gently around the edges if needed, pop them out of the molds, and serve warm.

Notes

Don’t Overfill: Fill your cups only 3/4 of the way full. Eggs expand significantly as they cook in the intense circulating heat of an air fryer. Silicone is Best: Silicone muffin liners work best because they are flexible, non-stick, and withstand air fryer temperatures safely. If using metal ramekins, grease them extra thoroughly. Make-Ahead & Meal Prep: You can bake a double batch over the weekend, let them cool completely, and store them in an airtight container in the refrigerator for up to 4 days. Reheat in the air fryer at 300°F for 3 to 4 minutes.
