Instructions
- In a medium mixing bowl, combine the finely chopped broccoli florets, shredded sharp cheddar cheese, and softened cream cheese. Stir thoroughly until incorporated. Season with a pinch of salt and pepper to taste. Set aside.
- Pat the chicken breasts dry with paper towels. Place a chicken breast flat on a cutting board and use a sharp paring knife to cut a deep pocket into the thick side, ensuring not to slice all the way through. Repeat for all four breasts.
- Divide the filling into four portions. Spoon one portion into the pocket of each chicken breast. Press the edges closed and secure the opening with 2 to 3 toothpicks horizontally across the opening.
- In a small bowl, mix together the garlic powder, onion powder, paprika, salt, and black pepper. Rub the outside of each stuffed chicken breast lightly with olive oil. Sprinkle the spice blend evenly over all sides, pressing gently so the spices adhere.
- Preheat the air fryer to 380°F (195°C) for 3 to 5 minutes. Lightly mist or brush the basket with high-smoke-point cooking oil. Place the chicken breasts in a single layer with space between them. Cook at 380°F (195°C) for 18 to 22 minutes, flipping halfway through. Ensure the internal temperature reaches at least 165°F (74°C).
- Remove the chicken from the air fryer and transfer to a cutting board or platter. Allow the chicken to rest undisturbed for 5 minutes. Remove the toothpicks before slicing and serving.

Notes
Pre-cook the broccoli slightly by blanching or steaming for a couple of minutes to avoid crunchiness. Do not skip the 5-minute rest period to prevent juices and cheese from escaping. Cheese can be substituted with Monterey Jack, mozzarella, or pepper jack. Nutrition per serving: 345 kcal, 42g protein, 18g total fat, 3g carbohydrates.
