Instructions
Step 1: Prep & Wash the Potatoes
- Before peeling your whole potatoes for your main dish (such as mashed potatoes or soup), scrub the outside vigorously with a vegetable brush under cold running water to eliminate all soil and debris.
- Peel the potatoes in long, wide ribbons using a standard Y-peeler. Aim for ribbons that carry a faint sliver of flesh—this gives the cooked peel a dual texture of crispy edges with a tender bite.
Step 2: Cold Water Starch Bath
- Submerge the strips into a large bowl filled with cold water and ice.
- Agitate the peels gently with your fingers for 30 seconds to release loose surface starches.
- Let them soak undisturbed for 15 to 20 minutes. Soaking prevents the peels from turning gummy and ensures a clean, brittle snap once air-fried.
Step 3: Dry Completely
- Drain the peels in a colander and shake off residual moisture.
- Spread them out across a clean, lint-free kitchen towel or several layers of heavy-duty paper towels.
- Pat them thoroughly dry. Roll the towel up over the peels and press gently.
- Moisture is the enemy of crispiness. Any lingering water droplets will create steam inside the basket, producing a leathery texture instead of a crisp chip.
Step 4: Season Evenly
- Transfer the bone-dry peels into a dry mixing bowl.
- Drizzle with 1.5 tablespoons of avocado oil. Toss thoroughly with your hands or tongs until every ribbon is lightly, evenly coated.
- Whisk together the salt, garlic powder, smoked paprika, onion powder, black pepper, and cayenne in a small ramekin.
- Dust the spice blend across the peels while tossing continuously to avoid clumps of seasoning.
Step 5: Air Fry to Perfection
- Preheat your air fryer to 400°F (200°C) for 3 minutes.
- Place the seasoned peels into the air fryer basket. A loose, overlapping single layer works best; if doubling the batch, fry in two separate rounds to prevent overcrowding.
- Cook at 400°F (200°C) for 12 to 15 minutes .
- The Critical Agitation: Every 4 minutes, pull the basket out and shake vigorously, or use silicone-tipped tongs to redistribute the ribbons. Air fryer fans can blow light peels toward the heating element; shaking ensures uniform browning and stops edges from scorching.
- Check at the 11-minute mark. When the peels are curled, deeply browned, and rigid, they are done.
Step 6: Finish and Rest
- Immediately empty the hot peels into a clean bowl.
- If using grated Parmesan, toss it over the peels while they are steaming so the cheese melts slightly into the crevices.
- Let them cool in a single layer on a plate or wire rack for 2 minutes before serving; they continue to crisp up as moisture evaporates during cooling.
