A quick, low-carb, and keto-friendly breakfast casserole made in the air fryer for easy cleanup and customizable flavors.

- 8 large eggs
- 1/2 cup heavy cream (or whole milk)
- 8 oz breakfast sausage (cooked and crumbled)
- 1 cup shredded cheddar cheese (divided)
- 1/4 cup diced bell peppers (optional, for color and crunch)
- 2 tablespoons fresh chives (finely chopped, plus extra for garnish)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper

- Preheat your air fryer to 350°F (175°C) for about 3 to 5 minutes. Lightly grease a 6-inch or 7-inch round cake pan or air-fryer-safe baking dish with cooking spray or butter.
- If using raw breakfast sausage, cook it in a skillet over medium-high heat, breaking it apart until thoroughly browned and cooked through (about 5-7 minutes). Drain excess grease and let it cool slightly.
- In a large mixing bowl, whisk 8 large eggs and heavy cream until smooth and well-combined. Add garlic powder, onion powder, salt, and black pepper, whisking once more.
- Add the cooked sausage, three-quarters of the shredded cheddar cheese, diced bell peppers, and chopped chives to the egg mixture. Stir gently with a spatula to ensure even distribution.
- Pour the mixture into the prepared greased baking dish. Tap the dish gently on the counter to release any trapped air bubbles.
- Place the baking dish into the preheated air fryer basket. Cook at 350°F (175°C) for 20 minutes.
- Open the air fryer and sprinkle the remaining cheddar cheese evenly across the top. Cook for an additional 3 to 5 minutes, or until the cheese is melted, bubbly, and golden-brown, and the center is set.
- Remove the dish carefully using heat-resistant mitts. Allow the casserole to rest for 5 minutes to set. Garnish with remaining fresh chives, slice into wedges, and serve warm.
